    This is by far the best turkey I've ever made. This recipe makes a better turkey than even Mom makes (ooh! don't tell her! The key is definitely soaking the turkey in the brine overnight in a 5 gallon bucket. I dumped in ice water, set it in the bathroom (with the window open -I'm single so I can get away with that to keep it cool and then roasted it the next day. Another key to getting it golden brown is roasting at 500 degrees for a half hour and then covering. I'll be doing this again for Thanksgiving.

    I have been using Alton's recipe for four years now and my guests always rave on how delicious the turkey is. I have passed this recipe to many people who also agree with me that this is the only way a turkey should be prepared and roasted.

    I first use this recipe, last Thanks Giving, Huge Success (no leftovers. The following summer I roasted chicken (8 on the spit, using a summer blend of spices again huge success (not even enough left for chicken soup. This Halloween Turkey, 15 family members making a return trip. This is worth the effort!!!

    Every year my aunt or gramma make the turkey for Thanksgiving....and let's just say, last year's turkey was still frozen when we got there. A few days before Thanksgiving last year, my dad and I saw this show, and decided to try it out and take it with us to our yearly gathering. This was the BEST turkey I have ever had. It was juicy, oh so juicy. It had so much flavor, and it was gone before the other turkey could even thaw!! We have already told our family that we are making the turkey this year Alton style!!

    This was the best tasting, most beautiful looking turkey I have ever made. My family raved about it, I unfortunetly have cemented myself into hosting Thanksgiving for the next 20 years---one other note, you may want to label and then later hide your brine-bucket, my fiance used it for painting, so I'm off to the hardware store to get a new 5-gallon bucket and a permanent marker...
