    As any cook worth their salt will tell you, use it! I was worried that my turkey would be salty. I also HATE oversalted food. So when I tried this recipe, I was worried that I was ruining Thanksgiving. But since no bird could be drier than the one of the previous year, I followed this one very carefuly. I was suprised when it turned out SOOOO MOIST and yet not underdone! Even leftovers (these only existed because there were so few of us were extremely moist and perfect for snacking on (no need for sandwiches 3 days later!!

    I now proclaim "AS ALTON AS MY WITNESS, I'LL NEVER GO BASTING AGAIN!!!"

    I was married into a family with a gourmet-cooking mother in law, though act to follow. I made this turkey for oour family last year and my brother in law hasn't stopped talking about it since. It was AMAZING!! Thanks Alton.

    I'll never make a turkey again without Alton's brine.
    You can save $$ by substituting vegatable broth base paste for the liquid broth. Just use about half of what's called for on the paste package.

    The intimidation of the turkey has come to an end. This recipe and the instructions provided by Alton make it so even an amature can produce a Turkey far more flavorful and my dear Aunt Hilda's.

    Dear Alton and all,
    I had never ever in my life had had such a delicious, flavorful and juicy roasted turkey! I made it for our Christmas dinner at home in Costa Rica, and it was a overwhelming success. Not even I could believe how good it was, even when I made it myself. Will this brine work as well with leg of pork? Anyway, thank you for helping me bring success to my family's holiday dinner.
