    Holiday turkey was a meal merely endured until this recipe! Now it is requested at least monthly!! Tender, moist and flavorful. Works very well when perpared with bone in Turkey Breasts. Thanks Alton! Jim

    The last two years I have been responsible for our family's Thanksgiving dinner. Never cooking a turkey before in my life, I turned to the Food network channel. The Good Eats "Romancing the bird" episode gave me a great recipe. My turkey came out so good, it tasted as if I've made it for years and years!! Thank you Foodnetwork and Alton Brown!!

    This recipe is the best. I've made it at least 4 times already and have adapted it to chicken as well. The flavor and juiciness of the meat is fabulous! Go AB!

    I'm not a turkey person in the past, once a year was fine for me but after having made this one for Thanksgiving (my first on my own! it turned out perfectly tender and moist and actually had flavor! Good Eats rocks!

    I was highly disappointed with this receipe. I put all of that work into this turkey recipe and it turned out so good that we didn't have any left overs. Not only did my family eat it all, they raved for a month afterwards.

    I made this for Christmas eve dinner and it was so good, juicy and flavorful. The one thing I added to the recipe was when I mixed some butter with tyme and rubbed it under the skin,and over the top of the turkey.

    This makes the moistest white meat I have ever tasted. Flavorful & the pan drippings make excellant gravy (that you won't even need for your bird!!
    My changes:
    I stick with a very basic mix of pepper, garlic, water, salt & rosemary for the brine.
    I fill the cavity with 1 onion, 1 apple, 1 orange (all quartered - fabulous aromatics!
    Instead of oil on the bird I use a mix of 2 sticks unsalted butter softened with basil, rosemary, poultry seasoning, rosemary, dill & pepper.
    I give the bird a good coating & follow AB's roasting directions exactly. Wonderful results every time! If you are making turkey for the first time - this is the recipe to try!

    When I moved to Austin, TX, my wife and I left all our family behind. At Thanksgiving time, we were faced with actually having to make dinner for once. Being that we like tradition, we decide to educate ourselves about turkey and tried AB's recipe. It makes the most amazing turkey you can imagine... I never remember Thanksgiving tasting so good. The brine is the secret! My only criticism is the high oven temp at the start (500 sets off my smoke alarm every time when I open the oven door. Would be better if my oven had a vent to the outside, but it doesn't, so it smokes up the house a little. But it's worth it in my book.
