    When I moved to Austin, TX, my wife and I left all our family behind. At Thanksgiving time, we were faced with actually having to make dinner for once. Being that we like tradition, we decide to educate ourselves about turkey and tried AB's recipe. It makes the most amazing turkey you can imagine... I never remember Thanksgiving tasting so good. The brine is the secret! My only criticism is the high oven temp at the start (500 sets off my smoke alarm every time when I open the oven door. Would be better if my oven had a vent to the outside, but it doesn't, so it smokes up the house a little. But it's worth it in my book.

    I've made alot of Thanksgiving turkeys, but this recipe is by far the best. Definitely a little more work, but it's the juiciest, most flavorful turkey I've ever made and it looked almost too good to eat. Thanks!

    Brining the turkey the night before is key!! The turkey stays moist no matter how much you may try to over cook it!!

    One of the problems I have with turkey is that the breast meat is always dry. This turkey was not dry - it was the best turkey we've ever had. I highly recommend this recipe. It's a little more work, but well worth the effort.
