Been using the brine technique for over four years. Recently talked to my mom and she remembers her mother doing this but forgot why. Now everyone I have turned on to this method is brining their birds! This is a guarantee for moist, tender, and VERY flavorful turkey. Use it on chicken or any game hen. THANKS ALTON...you hit one out of the park!

This turkey recipie has not only become the annual favorite of the family others have also started to use. The moistness and flavor produced has exceeded any prior recipies. "This is the best turkey I have ever tasted" is a common response from visitors on Thanksgiving.

Used this in 2003 for first time, worked to perfection. I have now become a brining fool. Am already in prep process for 2004. This gives turkey an improved preperation.

I admit it, I am the World's Worst Cook. I am so bad, when I suggested hosting our family Thanksgiving last year, my stepfather declined the invitation due to the risk of starvation. Well, when my mom tasted the turkey, she insisted I make a platter for her to take home to my dad. This year, he invited us to their house for Thanksgiving dinner - but asked that I bring the turkey :- What a delicious bird!

I also use this brining technique on chicken and game hens, and I also never stuff the birds. Now my poultry is moist and juicy, bursting with flavor. (Note: add a little water to the pan when you cook at 500 degrees just so you don't set off the smoke alarm when drippings hit the very hot pan.
