This method is pretty much flawless! We have used this recipe for 5 years now, and it always comes out perfectly. The brining is an integral part of the process. Don't worry about it being salty - as long as you wash out the cavity and the surface after the brining, you won't have a salty taste. The idea of brining the turkey to have a moist bird is catching on. Williams-Sonoma even has a brining kit available this year that follows this brine recipe. Also, don't be afraid of the 500 degree oven for 30 minutes part. This ensures that you sear (not burn the outside, and keeps the juices inside the turkey.
If you want a really moist, juicy turkey without the hassles, follow this recipe - you won't be disappointed!

I've been using this recipe for the past five years; and, each year, my family puts me in charge of the turkey at Thanksgiving. It's a wonderful recipe, and we rarely have leftovers!!

I've used my mother's and grandmother's recipe for cooking turkeys and they have always turned out the same way. DRY.
The Good Eats Roast Turkey is the absolute best and my mother and grandmother agree!

We have used this brine recipe for the past 4 years. We use it for our Christmas turkey as well. It gives the turkey great flavor, and keeps it very moist. Highly recommend it!

I haven't cooked that many Turkeys but this brine and roast turkey was a hit with family members. Even the ones that are not big turkey fans liked the flavor and commented on how moist the white meat turned out to be.
