I made Alton's turkey last year for my In-Laws at Thanksgiving. It was SO hard to convince my mother in-law that the turkey would be cooked all the way through. Everyone agreed that it was THE best turkey we had ever eaten. I would HIGHLY recommend this recipe to some one who enjoys cooking, but maybe like me you like things to be simplified. I did not brine the bird, I did everything else and it was PERFECT!

Finally, dark meat that is fully cooked and breast meat that is not overcooked. The foil cover reflects the heat keeping the breast from overcooking.

Alton's recipe for this turkey is wonderful. I have been using Alton's recipe for the last 4 Thanksgivings & my family LOVES it. No more dry, over-cooked turkey meat!!!! And the recipe is very easy to follow. Also, our children also like to be involved when I make the turkey brine. It has become a family affair in our home. Thank You!!!!!!

Tried it for Thanksgiving 2003. Tasty and moist. Very nice flavor and easy to do.
I placed the brine in a clean plastic garbage bag and placed that in a large bucket. It made cleanup so much easier.

After trying this recipe last thanksgiving, i have made roast turkey 4 other times during the year just to show my friends and relatives how good roast turkey can be. Before we tried brining the turkey last year my wife and i were contemplating some other main course for the holiday. We were tired of dried out turkey. We always had tons of left-over turkey, not any more. People love the taste of the turkey. I used to only eat the dark meat but now i am a white meat fan too.
Way to go Alton!!!

This will be my 3rd year roasting this turkey. My entire family demands for Alton's turkey every year! It's Alton's turkey or no turkey at all!

The good news is that everyone loves this turkey.
The bad news is that now that I made this for my family, they INSIST that I make it every year so I get stuck cooking every year now.
This is without a doubt the best turkey I ever had.

I have been following this recipe for the past 3 years. I have made this turkey so many times, and everyone always tells me that this is the best and most moist turkey he/she has ever had. I want to follow his recipe on the leftover turkey sandwiches but I never have any leftovers!He is the best!
