Alton Brown delivers the goods as always. The turkey came out great thanks to all the research Mr. Brown did in finding the optimal way to brine and roast the turkey. I can't imagine what the turkey would have come out like if I had followed the instructions on the wrapper. I highly recommend this recipe for the next time you decide to entertain a big crowd of discerning connoisseurs!

Wonderful! My turkey was so moist! I have failed the turkey test in the past, sooo dry! My nephew used this recipe a few years and it was the best turkey I ever tasted. Deceided to try it this year-Woo Hoo!!! I can finally cook a great turkey! Now I can cross that off my bucket list!! You cannot go wrong with this recipe!!

The grocery store had a huge turkey sale after Thanksgiving so I decided to buy one and try making my very first turkey at home. My husband and I have eaten Thanksgiving turkey dinner at many different homes, and despite any differences in cooking style, it was always dry and boring. Tonights turkey dinner was simply the very best turkey we have ever had. It was so juicy you could squeeze flavorful juiciness out of the breast meat if you tried! We stuffed ourselves! The aromatics really made it special for me, the rosemary scent seemed to have permeated every part of the meat. I made sure to utilize the info in the videos which was a big help, the foil breastplate kept the breast meat very moist. A HUGE thumbs up and thanks to Alton Brown and Food Network!!

This is the first year I brined a turkey. At first I thought it might be too much trouble, but I'm glad I did it. I followed the directions precisely and used the specified aromatics. My guests said it was the best turkey they'd ever had. They were raving about it for days. From now on this will be my only method of cooking a turkey. It looked picture perfect, too!

I realize that this much-lauded recipe is almost bulletproof when it comes to reviews. But honestly, our bird turned out dry and without much flavor (and I'm a pretty good cook who has no trouble following recipes to the letter. I'm a huge Alton Brown fan, but this recipe disappointed us.

This turkey was so easy and came out so flavorful and moist, I couldn't wait for the leftovers, but unfortunately my family ate every last bite. This will be a new family tradition and brining is definately the way to go.

This was perfect. We went out for actual thanksgiving, so had no leftovers, and I HAD to try this, and planned it for today. Brined for 36 hours, my 12 lb turkey was cooked in 1 3/4 hours after the initial 30 minutes at 475....crispy skin, juicy meat. Served with mashed potatoes and dressing made with chestnuts, dried cranberries and sausage.

I only wish my stomach was bigger and I could have eaten more!

    Thank you Alton!

I bow down at the altar of Alton Brown!
I have never cooked the Thanksgiving turkey before, and this year I agreed to do it for a gathering of 15 people that included some really good cooks. The pressure was on!
I must have watched Alton's video on how to make this recipe at least nine times.
But I followed his instructions and it worked and it was fantastic! Everyone raved about how juicy the turkey was. Some of our guests had come from another T-giving gathering where they had a fried turkey, but these guests said my turkey was juicier than the fried turkey.
This recipe ROCKS and it made me the hero of Thanksgiving.
    Thank you, Alton!!

Awesome! I have now made this recipe several times and it always turns out great. Sometimes I change out the aromatics for a different flavor, like oranges instead of apples, for instance.
