This turkey was a huge hit in my family and three other families of friends to whom I recommended this turkey brine recipe.
I challenge anyone to find a better recipe for Thanksgiving turkey.

this is the second time i make this recipe,i noticed a lot of people say the bucket wont fit in the fridge but for me that was no problem since i bought that big orange bucket they sell at Home Depot for like $3.00. Because i live in Puerto Rico and it's 80 degrees and sunny i just thaw it in the brine overnight(outside the fridge on a big beach towel plus i add some ice.it's just PERFECT!!! my turkey was 14.6 lb and it was in the oven for 2:40 min, i left 10 more min and the skin was crispy and delicious!!!

For several years I begged my dad to let me make the turkey. But it was out of the question. His turkey was OK, but a little dry for my taste. Thanksgiving was at my house this year and I finally got to make the turkey. My husband heard this recipe on NPR, while at the same time I found it in my Food Network Magazine. (Well, after 30 years of marriage we finally agreed on one thing. Anyway, I purchased a 22 lb frozen turkey, so I was concerned about it defrosting. I actually put the partially frozen bird in the brine. Luckily I was working out of my garage fridge, because I made a mess. Every time I moved the pan I sloshed the brine. But in the end, EVERYONE loved the turkey. It was so moist and flavorful. BTW, no one knew I didn't really cook the stuffing in the turkey either, as instructed I added some of the precooked stuffing for the last hour or so of cooking. Thanks for the GREAT recipe!

I made my first Thanksgiving turkey this year, and I'm so glad I found this recipe because it was so easy and I'm definitely a novice in the kitchen. My worst fear was that my turkey would be dry, but it was moist and tasty, and I think I owe a lot of thanks to that brine. I didn't use candied ginger because I didn't have any, and it still turned out great! My husband said it was the best turkey he'd ever had, and that's saying a lot! Thanks Alton!

I followed Alton's instructions exactly (except for putting pats of butter under the skin, and this was the best turkey we ever had!! I have to admit that the brine didn't smell that great to me, so I was a little worried. But just after 15 minutes in the oven, it already smelled wonderful! It also made the most delicious gravy. I did put carrots, celery, onions and garlic, with some stock, in the bottom of the roasting pan. The turkey was delicious and moist, and I never had to baste it once! Can't wait to make again for Christmas!

Best turkey ever. Made this last year for christmas at my parents house. Everyone in my family loved it. My uncle told me he never knew my secret tallent was cooking. Was all because of this recipe. It was so good my aunt has asked me to make it for chistmas agen this year at her house. I never used any of the spices in the cavity. I just rubed herb butter under the skin of it. I already have one in brine right now for dinner tonight. It is just absolutly amazing. Cannont say enuf about this. All of browns recipe's are amazing. Have made a ton of stuff out of his cookbooks.

I have been using this method for 6 years. Alton's recipe is taped inside my spice cupboard. It is PERFECT EVERY TIME. I just did a 24 1/2 lb turkey and it was done in 2 hours. The 6 years old recipe calls for 20 minutes at the 500, then to 350, it is perfect, beautiful, moist, delicious.

Was asked a day before if I would help with the turkey this year. I didn't have time to think and said, "Sure". However, I had no idea what to do. I happen to be watching "Good Eats" earlier in the day and decided to look for the receipe I saw Alton making. Since the turkey was at my parents house already I didn't have time for the brine so only did the aromatics and followed the cooking suggestions. Everyone, including me, was a bit weary that the turkey would be done in 2.5 hours. Not only was it done on time but it was moist and the color was perfect! The next day, my aunt who is an amazing cook called me to walk her through the cooking process as well. Highly recommend it!
