    NO leftovers for sandwiches...

    People that don't brine their turkey are like a blind man in a dark room looking for a black cat that left the room weeks ago...Alton's brine recipe is incredible. I have made it EVERY year (except one...I didn't cook that year...big mistake...!) - however, I have made some minor additions to the brine - I add 2 or 3 large bay leaves to the stock; I love that flavor. I also go a little heavier on the amount of black peppercorns and allspice berries. I also crack both of those berries to release just a little more flavor. Also, when it comes to adding the ice, I tend to cut back just a teeny bit on the water and add a few containers of frozen orange juice concentrate. Just a little more flavor...I also sometimes put some oranges, along with the apple and onion, in the turkey cavity to get just that little more boost of citrus I like in my poultry...it doesn't overpower the taste, but it DOES add just a hint to make it a little different...in order to make everything fit in the cavity you'll need a bigger bird, obviously, but hey...there's nothing wrong with MORE turkey! (And it's weird...as I write, I'm waiting for my wife to come back from the grocery store with my missing brine ingredients...yep, I'm making it for Superbowl Sunday!) And on another note, if you've never tried Alton's shrimp brine, make sure you try that out as well...it works best for U-10 to 25 count shrimp.

    Always Amazing

    I've used this recipe for the last few years (it seems like forever). I was 19 years old the first time I made this bird and it was the first time I ever made a turkey. The bird looked so delicious when it came out of the oven my uncle (a hunter) grabbed me and kissed me on the cheek. It tasted just as good as it looked, super moist and flavorful. I make this turkey every year now and it's always as good as the first time I made it. It's definitely NOT my grandmother's turkey.

    I made my first turkey for Thanksgiving last year (2009) and i made Alton's turkey. It was so good that not a single bit was left over (and i made 2 turkeys). Although i was very flattered by all the compliments, i was sad that i didn't have left overs.

    This is certainly the best turkey I've ever made and certainly worth the extra work. Only comment is that at 500 degrees, the juices burned in the pan and created a lot of smoke. I added extra water in the pan which took care of the problem.

    I pride myself as a decent cook, this turkey put me over the top. my family(19) get together and everyone brings a dish or two, appetizers and what not, and my brother wanted a heart felt thanksgiving this last year, so i looked to AB, and he came through for me. the only think i did different with this turkey was i made HOMEMADE vegetable stock the sunday before. made the brine on tuesday, and soaked for 18 hours. i put so much love into this bird, but i didn't need to, it was awesome!! just hold up the breast and squeeze just a lil bit and juice pours out!!! now, just like hundreds of other people reviewing this recipe, i too am now in charge of the thanksgiving turkey!!! thanks Mr. Brown!!! JUST TRY IT!!! YOU WILL NOT BE DISAPPOINTED~~~~!!!!!!!!!!!!!!

    This was my first time ever braising a turkey and I will never cook my turkey any other way. Mr. Brown's technique made my Christmas bird amazing and it received so many compliments. I am a turkey fanatic and I have to say I definitely raised the bar with this one. Thank you for your recipe! You have made me a believer and I did not change anything in the recipe. It definitely stands on its own.

    Remember the old days when you got up early to put the bird in the oven so it would cook slowly all day...and then you needed lots of gravy, cranberry sauce and wine just to keep your mouth from drying out? Well, forget that altogether. None of my friends could believe that I cooked a 19 lb. turkey to perfection in just 2 1/2 hours. If you don't cook your turkey this way, you're wasting your time. This is the best ever...juicy and flavorful. Alton...how did you get to be so smart?

    This was my first time ever to make the turkey for the whole famly. I was so nervous , if i ruined this what would we do?? I had a pot roast in the slow cooker but it wasn't enough. I saw all the reviews and said hey what the heck!! The best decision i've ever made, it was so easy i just followed the instructions and bamm! out came a delicious , moist turkey. Everyone asked what i did to make it so moist, and they said that i would be the one to do the turkey next year. I was so happy. So if you can read and follow instructions then it will work!!

    Wanted this to be good, but I found it was expensive to brine and more touble than it was worth. I hardly noticed a difference from a regular roasted turkey and the brined turkey. Won't make this again.

    We made a New Year's Day Turkey following this recipe and it truly was a wonderful as everyone has indicated. Since it was after Thanksgiving, the stores didn't have a lot of the usual turkey supplies-- so we discovered that we could use the big plastic turkey roasting bags as a brining bag. Best turkey we ever had and really easy!! Also, the soup we made afterwards was absent fat as this turkey recipe was so lean without the addition of the usual butter component.

    My husband volunteered us to host Christmas dinner at our house this year and before I knew it our guest list had grown to 16 people! Not a huge number but enough to warrant some serious planning. I had never made a turkey before but read such great reviews about this one (and I'm a huge Alton fan!) that I gambled it all on this turkey recipe. It was amazing! The turkey was perfectly cooked and juicy and extremely flavorful. While the turkey was cooking, I was of course getting all sorts of advice on how to "really" make a turkey. Everyone shut their mouths after dinner and I got a ton of compliments on the turkey! would recommend anyone, novice or advanced to try this recipe. It is well worth it! I've now been volunteered to host Christmas dinner every year!

    Real Man Food!

    This recipie is soooo delicious I can't handle it. We all stare at my husband's preparations. I love this recipie because now I no longer am stressed out about the bird and my husband likes moving the bird to and fro--using the ice chest, making the special brew. Oh, yeah--it required a trip to ACE to buy the timer/temp prob thing!!! This recipies requires enough equiptment out of the garage to make my husband feel like he's making manly food--almost like barbequeing!! I am thankful tat my husband's bird comes out great every time and he doesn't stress out about the food like I did. We have had this bird probably like six times since we saw it first air on TV. We are your greatest fans Alton, from Oakdale, CA Cowboy Capitakl of the World!!!

    First brined turkey I've done, second turkey only. Made turkey for early Christmas and was a hit. Wife who usually cooks and comes from cooking family quotes, "Best turkey I've ever had!". All agreed doing stuffing out of bird and replacing with the aromatics. Made gravy with the drippings and will admit best gravy I've tasted. The sweet of the apple and flavour of the cinnamon, rosemary and sage was second to none. Thanks Alton. Passed on recipe to friends with strong recommendations to try soon.

    I know it is too late for thanksgiving but this recipe worked great. I made today and I followed it step by step and it was delicious. I usually don't cook turkey because the meat comes out dry. So thanks Elton Brown I am cooking turkey every Thanksgiving.
