    Great and easy summer salad! I saw the peas at the farmers market and they looked so good I bought them without thinking what I would use them for. But this was great! I didn't have fresh mint or parsley so I used some dried mint and bit of mint sauce. I also put in some cilantro and used shaved parmesan cheese. Fresh, light, and tasty!

    What a great, fresh tasting salad! I didn't have any mint, so I omitted that and I didn't miss it a bit. I used homemade ricotta cheese for the cheese, and it was tasty! This is a great salad for a hot, summer day! I will definitely make it again.

    I gave this an 'excellent' because I really don't like peas, but this is fantastic! The flavors are delicious together. We couldn't find any of the cheeses so we used fresh mozzarella, which tasted fine. Even my 1 year old likes it, and that's saying something!

    I've used everything from broccoli and corn to feta in place of the swiss and peas and it's always good. so easy to whip up last minute too!

    I found favra beans at the farmers market, so I used those instead of peas, and it was good, but it needed something, so my mom and I added chopped up cucumber, tomatoes, and avocado to it. NOW we're talking.

    This is a great salad - easy to substitute. I use WAY less oil - it doesnt even need that much. and i used feta cheese rather than fontina. i like it better with a tangy feta. it's so easy and the mint really makes it.

    I don't generally like plain cooked peas, but my boyfriend and I decided to try this one night. I'm so glad we did--it's delicious! We used frozen peas and fontina cheese. We also used dried parsley and mint instead of fresh, since we had the dried kind sitting around anyway. Generally I think you're supposed to use 1/3 the amount of dried herbs that you would use for fresh, but we used the same amount. The result was a VERY flavorful dish that my boyfriend, his roommate, and I all loved.
    The only reason I did not give this five stars was because this dish does not have very good leftover potential, at least in my experience. The peas tended to lose their color and become kind of odd-looking if left in the refrigerator overnight. I am not sure whether this would be true of fresh peas, but I'll be sure to try it.
