These are amazing!!! My mother brought home brussel sprouts, and I thought, well, i'll give that brussel sprouts episode a whirl, Alton had changed my mind about many things before.
I am a convert. These are wonderful!!! I will say, if mustard isn't your thing, use less than the smoked paprika, i've had a few with chunks of mustard that aren't amazing for my palate, but every one I get with the paprika makes me want to swoon. Smoked paprika is a must, believe me, it makes a difference. I rotated them every minute for the first 5 minutes, then let them sit on each side for 3 minutes. They're soft, but still chewy. I will be making these again for a long time!!

I made these with grilled steak and baked potatoes the first time, and they were a huge hit! Since then, they have become a weekly side dish for our family (we grill alot, living in the South with everything from simple grilled burgers and dogs to fancier steaks, tenderloins and marinated chicken breasts. Tonight I am going to add mushroom and broccoli floret skewers and try doubling the marinade and using it on everything, since I have one child who won't touch a Brussels sprout but loves mushrooms and broccoli. Since I am disabled and complicated time-consuming recipes are too much for me, this one is a definite winner in my house! We just LOVE Alton Brown, too!!!

I prepared 3 lbs of sprouts thinking that I would have leftovers. Four of us ate all of them right off the bamboo skewers and there was a small fight over the last skewer. We had them with honey glazed blackened salmon and a couscous and roasted pine nut side dish.
I used slightly less salt and substituted sweet paprika. They marinated for over an hour after microwaving and before grilling. I did not toss them with the left over marinade after grilling. I also ignored the grill time in the recipe. I have an electric indoor grill and am used to grilling vegetables until they have nice brown marks rather than for a specific time.
Definitely not a quick dish because of the skewering. If you use bamboo skewers you can fit 5 sprouts per skewer. One thing I really liked about this recipe is that you can make it in advance and then put on the grill after guests arrive. Microwaving cuts down on the grill time and ensures that the sprouts are evenly cooked. Normally I would not be so daring as to serve brussel sprouts to guests but this recipe was a huge hit.

I just read the review that jokingly said to feed unwanted brussels sprouts to the dog. Dogs can't digest sprouts properly. The sprout could cause intestinal obstruction. One of my large dogs suffered this problem. Surgery is very expensive. Play it safe and just toss out any sprouts that you can't eat.

I changed it bit into a more spicier version and my husband loved it....I marinated them into cumin powder, ginger, garlic, tomato, onion, jalapeno paste and lemon juice and then grilled them.....the best food i ever had.

For the record, I have always liked Brussels sprouts even as a kid. Plus, I do quite a bit of grilling and was looking forward to this recipe.
This recipe was prepared exactly as written except I used sweet paprika versus smoked paprika since I was out of the smoked variety. I did use kosher salt, but the results were too salty.
Also, after 10 minutes of grilling, the Brussels sprouts were slightly under cooked. Turning and leaving the them on for another 5 minutes solved that problem. Note: watching the show, I believe Alton advised turning the skewers a total of 4 times, 5 minutes each.
Cut back on the salt and grill 15-20 minutes, then I expect the recipe will be at least 4 stars for me.

For the record, I haven't had a steamed or boiled brussels sprout since I was a kid, and threw them up. Understand? I hated 'em.
Fast forward, I'm an accomplished cook, and usually prepare brussels sprouts with olive oil, and garlic in a cast iron pan, finished with balsamic vinegar. Very good that way. I had never grilled them before.
This recipe rocks! I did cut them in half before marinating, and used my 'grill pan' instead of skewers. (I hate skewers, too much work.
If you absolutely hate brussels sprouts, try this anyway. It'll cost you two bucks for a pound, and pennies for the other ingredients. Feed it to the dog, if you still hate them. But trust me, Fido will be hungry because you and your family will eat these up.
