I live in San Diego where avocado is basically our 6th food group. Guacamole is ubiquitous. This recipe is absolutely amazing. I've never made a guac recipe that had cumin in it, and why haven't I!???? It's the missing ingredient in all guacamole recipes. Thanks Alton!

I made a large batch of this guacamole (tripled the recipe and everyone loved it! I added some Spanish paprika and replaced half of the red onion with a shallot. I also prefer my guac a little chunky, so I just mashed the avocados and lime juice with a fork. Whenever I make something new I look up Alton's recipes.. he's my go-to and hasn't failed me yet.

Guacamole is one of my favorite snacks. I liked everything about
this recipe but did think 1/2 tsp of cayenne made it a little too
spicy for the size of the avocados I used. Next time I'll cut down
    the cayenne to 1/4 tsp.

Alton's flavors are always spot on, and when I found this, I immediately decided to make it his way. Unfortunately, I like my guacamole a little more chunky, and not so smooth & liquidy.. was just a little too much lime juice, and a little too mashed, even though I tried not to over mash it.. Taste was da bomb, just didnt care for the texture. not a problem, I know how to fix that nexttime! and there will be a nexttime.

My first Alton recipe is a winner. Didn't even read instructions, just threw it all in a bowl and mixed. Wasn't sure about the cumin at first but added it. I'd started to make Ina's and had already added the tabasco so it was extra spicy but outstanding!
