This is better than any guacamole we've had, and it's easy to make. I've made it with and without the cilantro, and it's delicious either way.

MAKE IT THE NIGHT BEFORE! Great recipe! I always make it when we have company over. I do make it the night before and let it sit in the fridge overnight. To make sure it doesn't turn brown, place plastic wrap over the guacamole. The key is to make an air-tight seal. Place the wrap directly on the guac without any gaps.

Perfection! But if you're not a huge fan of onions, reduce that amount. Can be overpowering if you are using strong onions.

I adore avocados & have made a ton of guacamole, but decided to search for a 5 star Food Network recipe. I love Alton Brown, so knew this would be a good one, and it did not disappoint. Best guacamole ever!!

If you have not made Guacamole before, this is a wonderful place to start. I like less onion (about a tablespoon finely chopped per avocado. And rather than cayenne, I use a couple dashes of tabasco per avocado more or less, depending on how I feel. I make minor adjustments like that and friends rave as long as I stay true to the course - 3 avocados per 2 ROMA tomatoes. Great ratio.

The best guacamole we've ever had.
A favorite in my household. Even people who don't normally like guacamole like this recipe.
