I adore avocados & have made a ton of guacamole, but decided to search for a 5 star Food Network recipe. I love Alton Brown, so knew this would be a good one, and it did not disappoint. Best guacamole ever!!

If you have not made Guacamole before, this is a wonderful place to start. I like less onion (about a tablespoon finely chopped per avocado. And rather than cayenne, I use a couple dashes of tabasco per avocado more or less, depending on how I feel. I make minor adjustments like that and friends rave as long as I stay true to the course - 3 avocados per 2 ROMA tomatoes. Great ratio.

I have only just started eating avocados; always hated them before. First time I've made guacamole and it is yummy! lots of flavor. All I ever taste in restaurant guacamole are the basics.

Just made this guacamole, and it is delicious! I love that it is mashed instead of mushed in a food processor. I don't care for chunky things in my guac, so I omitted the tomato and onion. I substituted habañero sauce instead of the cayenne, because it adds more flavor (and kick! than cayenne. It doesn't turn brown quickly either - must be because of all the lime juice. Yummy!!
