Leaf lard is pretty hard to come by, but luckily I have one of the 4 farms in the country that renders their own 16 miles from me. It is incredible how much difference the leaf lard makes in the taste of the biscuits! The only problem (and it's not the recipe is I just can't get the same rise that Alton does out of his biscuits. I even use the 3" straight sided cake pan and they just don't rise as high as his. I can only assume it's my oven...

First let me say that I have not always had good luck with biscuits, so I was nervous. I didn't have lard and used unsalted butter. They were super tasty! I loved the wheat taste. One critique... Even though I like salt, I think next time I will reduce the salt to one teaspoon.

Just made these...but I did not have the lard so I substituted cold pressed unrefined coconut oil(even healthier for you so I don't really know how they turn out with the lard but my way was very tasty! Next time I go shopping I will get the lard and see if there is a big difference or not if not then I will definitely use coconut oil as it is a healthier choice.
