    These are great! I had none of the problems mentioned previously - our mixer barely even got warm. I did reduce the amount of cornstarch and increase the amount of powdered sugar, and that worked just fine. Also, I didn't find this particularly sticky, as some people said. I guess a little bit - it's marshmallow after all - but I used my unoiled fingers and a spatula to spread the mixture in the pan, and it was no problem at all. Also, we were using the marshmallows for hot cocoa, so I rolled half of them in unsweetened cocoa powder instead of the sugar/starch mixture, and they were outstanding. Great recipe, and definitely worth a try!

    After failing at my attempt to make Tyler's marshmallows, I thought I'd give Alton's recipe a try. They turned out fabulous! On my second batch I subbed out 1/2 tsp. of peppermint extract and 1/2 tsp. of vanilla. I also added red sugar crystals to the powdered sugar/cornstarch mix--sprinkling them on first before dusting with powdered sugar. They add a bit of crunch to go with the hint of peppermint, and were so yummy!

    I've always thought it would be a little goofy to make your own marshmallows, but I'm glad I did. Recipe was simple (used more powedered sugar and less cornstarch 1 1/2 tblsp. They turned out great! My husband, who could care less about a marshmallow, took a bite and said Wow, these are a lot better than the ones from the store.

    The marshmallows were truly wonderful. They barely resembled the store boughten imposters. I added peppermint flavoring and drizzled a little red gel food coloring on prior to putting in the pan to dry...made a candy cane striped marshmallow which I then dipped 1/2 of each cut marshmallow in dark chocolate. MMMMyummmm. Try this one. It is good. Kitchen Aid does not recommend using your mixer for sticky dough for more than 3 minutes but if you mix until the consistency of marshmallow fluff, you will not have any problems.

    These marshmallows were so good and so easy to make! I almost didn't make them because of the other reviews saying that this recipe killed their KitchenAid, but I'm glad I did. The approximate mixing time is an approximate and yours might be different based on all sorts of variables. You need to watch how thick the marshmallow mixture is getting and stop once it's thick enough! I mixed mine until it was about the consistency of Marshmallow Fluff, which took a little over 9 minutes, and once it finished setting the consistency was perfect. I can't wait to try these with some flavor variations, but this basic recipe is awesome!

    These are so tasty and my mixer survived despite all the previous comments about burnout, and the one that had a 30 year old mixer, all I can say is DUH!

    I really like watching Alton on Good Eats. I have made many of his recipes. But this one also fried my Kitchen Aid Stand Mixer which I had for 30 years. But dispite that, they were good.

    I'm allergic to eggs, so I haven't had marshmallows in 20 years. These are far, far better than anything I every remember having. Now if I could just figure out a way to rationalize that they're good for me!

    One warning: don't try these if your stand mixer is underpowered. I have a fairly decent one, and these pushed it about as far as I'd ever want to push a mixer.

    If you have a kitchen aid stand mixer. Do not follow this recipe. I followed the recipe to a T. Towards the end my mixer just stopped. When I called Kitchen aid they told me that they never recomened mixing a tough or sticky batter for more than 5 min. So I am off to the repair shop. I could care less how the recipe turns out, but it fried my mixer!

    I love marshmallows and I could probably eat this entire recipe myself, it is soooo good. I saw Alton Brown cook them so he had some additional tips that made this recipe easier. I found it pretty easy and very tasty!
