After reading the reviews, I made a batch of full size minty marshmallows (1 tsp vanilla, 1/2 tsp peppermint extract. These are good on their own, but they're phenomenal in hot chocolate. (Next time, I'll make the minty version in miniature for this purpose.
2nd attempt was today, and I stuck with the original recipie with the goal of making mini marshmallows. It ended up being a rather hilarious sticky mess. Thank goodness the batter is water-soluble. A few suggestions if you're attempting mini marshmallows: 1 make sure your pastry bag is really big -- you only get one chance to get all that sticky mallow batter into pastry bag. After a minute or two, it starts to set and you can't really transfer it to the pastry bag at that point. 2 Next time, I'll probably mix it for closer to 13 minutes (instead of 15 minutes, because it was so stiff after 15 minutes it was difficult to transfer into the pastry bag.
All in all, a fun and tasty recipie, and I'll definitely make it again in the future!

Alton's recipes never fail: these are the tastiest marshmallow I have ever tasted. They came out very light and fluffy. I knew these would be good the moment I poured them into the pan - I got to lick the beater. I am sure this would make a excellent fluffer nutter or anything else you would use a marshmallow cream for as well. They are not to difficult to make and taste better than store bought. Definitly will try again.

These were so easy and so pretty! I'm making them for Christmas and giving them out with little baggies of homemade cocoa mix. I swapped out the teaspoon of vanilla with 1/2 tsp of mint and 1/2 tsp of vanilla for something a little different. They're awesome!

Made these today and they came out great, however I would adjust the cornstarch/powdered sugar ratio to much less corn starch. Every powdered sugar I have ever seen already has corn starch in it, and adding so much extra gave the outside of the marshmallows a funky corn-starchy flavor. I shook off all the excess but it was still weird. So I will try it again with maybe 1/2 powdered sugar and a tablespoon or two of cornstarch.
Also, I would add a little more vanilla maybe. 1 1/2 tsp would probably be good. Or I might try substituting a little peppermint flavoring for something different.
Otherwise a great recipe! (Alton Brown can come to my house now and clean up the powdered sugar mess.... ;-

I just made these and I am totally thrilled about how easy and delicious they are! I have never made marshmallows before. In fact, I didn't know you could make them at home. I will NEVER, NEVER buy marshmallows again! Alton's marshmallows are light and fluffy, they taste amazing and they are sooo easy to make. The only difficulty I had was waiting the four hours to try them! As you can tell, I am really, really pleased with this recipe. Alton, you are the BEST! Thank you so much!!!

THANK YOU AB for showing me how to do marshmallows...really easy, if a little messy, but who cares?? It didn't take me quite as long to cook the syrup to temp, and I swear it looked like the whipping was done sooner too, but I refrained from stopping early. I used peppermint instead of vanilla. OMG, and I don't really even LIKE marshmallows that much! YUM!! I will be making his ambrosia for Christmas dinner, and I am going to try one of the recipes for the sandwich cookies, too.

After watching a recent episode of Iron Chef, my fiance' decided to try this recipe himself. It came out great and is easy to make. Now this will be the only way we have our marshmallows!
