I doubled the vanilla like others suggested and they tasted great. This recipe was surprisingly easy to make and clean up after.

So delicious and easy to make! While a stand mixer is not absolutely necessary, it's definitely recommended. Also, I agree with doubling or tripling the vanilla in the recipe. I've made these a couple of times and look forward to making more and trying out new flavors.

The last time I made them, I didn't have a candy thermometer on hand, and decided to try with a meat thermometer. The downside: it doesn't read as high, and doesn't read as well. I tried to just follow the instructions based on the amount of time recommended in cooking the sugar, but I don't think I made it hot enough. This resulted in taking longer to whisk into the thick and fluffy consistency. BUT, it did still work out. Lesson learned: Not hot enough = longer whisking time. Just fyi.

They're a huge hit! Give them a try!

I make these marshmallows all the time for family functions. They are always a hit! People are so amazed that I made the marshmallows and really they are very easy and rather cheap to make. Clean up is rather easy if you fill the sink with hot, soapy water and just put everything in the sink right after you are done with it. I like use other flavorings and use different food colorings.

I was a little confused at first about the amount of gelatin to use (3 boxes or just 3 envelopes, but I went with 3 envelopes and it's safe to say that the directions mean 3 envelopes not 3 boxes! Rather than use vanilla flavoring I used rootbeer flavoring and it tasted amazing! We will be trying this recipe with many different flavors (you can add more or less flavoring based on how strong you want it to be, we added more for a strong flavor. Also I used a hand mixer and everything turned out good and I followed the advice of another user and used mostly powdered sugar in the sugar-cornstartch mixture!

I was surprised how great these Marshmallows... I cann't eat store Marshmallos here 'coz they are made from Pork Gelatine, & it's very difficult to find Marshmallows made from Kosher Gelatin, but I finally bought Beef Gelatin online & used this recipe & they r perfect...
u can also add ur favorite flavor by adding the extract concentrate at the same time u add the vanilla... I agree with doubling the amount of vanilla, it was soooo tasty... thanx for sharing it :

This recipe is SO fun and SO easy to make! I had a blast! I, too, was disappointed in the flavor the first time I made these, but the second time I made them, I added like three times the vanilla, and they were AWESOME! : I've found that letting them stay in the pan overnight before you cut them is the way to go, too. I plan on making these again and again (plus, getting the excited, "Really! You can MAKE marshmallows?!" from people when you tell them you've done this is really satisfying!

Suprisingly easy to make, and everyone was amazed that it was possible to make marshmallows on your own! lol. However, I was extremely disappointed with the flavor. They tasted exactly like store-bought ones; basically flavorless. Other people commented that they tasted like store-bought as well. I was expecting vanilla flavored marshmallows. I just made a second batch today and doubled the amount of vanilla. SO MUCH BETTER. I definitely will be keeping this alteration. No one has mentioned this yet, so maybe it's just me, but when I add the vanilla to the marshmallow mixture, the mixer goes CRAZY for a few seconds. It scared me to death on the first batch! So just be ready when you add the vanilla! Haha
