    I love this brine!! Been using it the past six years BUT I don't grill or smoke it, I roast him in the oven it's just fabulous and the family loves it. Nadine in San Antonio

    I've followed Alton Brown's Honey Brined Smoke Turkey recipe for the past six years. I 've cooked the turkeys (always 20lbs. or more on charcoal, wood, and gas grills using his method and the turkey has been consistently perfect---with the exception of last year. ' Seems that there was some partying going on in the vicinity of the smoker and that each participant felt called upon to take a poke at my turkey. I was cooking on mesquite and with all the opening and closing of the smoker to check on, poke on, and otherwise molest my turkey, my coals/fire/heat were less than constant. Come mealtime, the turkey wasn't really quite done. I carved it anyway and slapped it in the microwave for a little additional heat. Voila!!! Perfect turkey! Again! Thank you, Alton Brown!

    My wife and I hosted Tday last year because my in-laws house was being remodeled. I tried this recipe and it was a hit. It went over so well that my mother-in-law asked me to make the turkey again this year and bring it to her house. Anyone that is married knows what kind of compliment this is!!! The only change I made was to use more charcoal. I live in Ohio so more charcoal was required to hold the heat. I had coals going in the firebox on the side of my grill and on the opposite side of the bird in the main grill compartment.

    I don't know why I, an Alton fan from the beginning, have not tried this recipe before. Only deviation from the recipe was the equipment. I used a Traeger pellet smoker filled with hickory pellets, then stuck a RediCheck remote thermometer probe in the turkey's breast, hung the remote receiver on my belt and walked away. Yes I'm lazy, but EVERYONE said that it was the most juicy, full-flavored turkey that they have had, and these were real critics! My wife's family! Recommendation ~ Don't deviate from Alton's recipe or procedures.

    I used this recipe two years ago on Thanksgiving Day. Everyone loved it. I used charcoal, a smoker grill, and hickory wood chips. Needless to say, it tasted like more and we've done this several times. I have a turkey thawing in the fridge right now. Look out grill!

    I've made this twice now. Both times on the gas grill. Super easy! First time, I ran out of gas and had to finish it in the oven. It was still delicious. Second time it came out golden brown and amazing. Blew my dinner guests away. Bought both turkeys on sale in the fall, cooked and served the second one this summer outside with corn on the cob, baked potatoes and gravy. Would have made alton's cranberry sauce if I could have found cranberries. Great for hosting a party on a budget.

    I made this for Thanksgiving. We had a 23 lbs turkey because we were expecting 20 - 25 people. As it turned out only 15 showed up. The only leftover was a slice of breast. Used applewood in a gas smoker, kept the heat at 250, kept the smoke going for a good 6 hours then wrapped the bird in foil and continued to cook for two more hours. Use aromatics from Altons roast turkey recipe and brined in Altons honey brine recipe. Everyone said best turkey they ever had.

    We did this brine for a deep fried turkey on new years. The flavor was through and through and everyone loved. Will surely use this one again!!

    I used this reciepe the last 5 yrs for Thanksgiving and Christmas, I also add some extra ingridients from time to time but I always get rave reviews about the turkey
