I made this recipe just as specified, but had to do it in two batches in my food processor, as I ended up with a TON of chickpeas! It says that it makes two and half cups but it's more like six cups. I added some kalamata olives and sun dried tomatoes and it is super tasty!

I've been making this for about a year now. Good stuff. Like other comments, if you follow this recipe you will end up with enough hummus for several weeks.

Absolutely love this recipe. My husband hates hummus....until I asked him to try this. Now he loves only this hummus. Not difficult to make and extremely flavorful.

Great recipe....but be prepared for a massive amount of hummus if you follow it to the letter, as I started out to. Did the dried-peas-slow-cook method. Ended using half the peas, 3/4 the amount of tahini, 1/2 the garlic, almost all the lemon juice, all the salt, and a lot more olive oil, as I like my hummus creeeeee-meeeeee! So, just let it churn in your cuisinart, keep adding the oil at the end to obtain your desired consistency. I can't imagine why some people cut back the salt, as you will have zilch flavor if you do. And now I will make another batch from the reserved peas, as my son and his friends have just devoured the first batch. They all say "Thank you, Alton!!"

An excellent basic hummus; I like to spice it up with a little cayenne pepper. You may want to try halving the recipe, because the original measurements make a LOT of hummus.

Very good, wasn't enough garlic for us so I just added another clove but overall very good!

I was looking for a 'tonight' hummus recipe, so used canned beans, it came out really good! I LOVE hummus and falafel, and am always fairly bummed the recipes I find come out very un-authentic tasting. Now, I'm not going to say I could pass this at the middle-eastern restaurant down the street, but even my fellow agrees, this recipe is a keeper and the best I have found around! Thanks a bunch, yummy!!

Used 1.5 cans of chickpeas, no salt added. Tasted fabulous when done and got the best compliments on it!

Very good, but it needed a better consistency and more tang. Added the juice of one more large lemon, 3 tbs more of tahini, and 3 tbs olive oil. I added more so it wasn't so "pasty." It needed more levels of taste too. It felt flat without the extras.
