I have to give this recipe 5 stars even with my mistakes/variation. 1 I did not have buttermilk so I created a buttermilk substitute by mixing 2 cups of whole milk and 2 tablespoons of white vinegar; 2 I accidentally bought whole wheat flour, so I used half all purpose flour and half whole wheat flour and 3 I forgot to add the sugar (but I believe adding the blueberries and syrup made the pancakes sweet enough. This recipe is so delicious and easy I won't buy store bought pancake mix again!

I LOVE,LOVE this recipe. Its easy and quick when the family wants pancakes on a Sunday morning. Ive even made this into gifts with the recipe attached. People love that they can make homemade pancakes. Thanks Alton for another "good eats" recipe!

I always keep this on hand. This is bar none the best pancake recipe I have ever used.
Two additional suggestions;
Whisk the heck out of the dry mix before adding the wet stuff. Makes the cakes fluffier without having to sift.
Use King Arthur flour. I am telling you, that stuff makes the best pancakes you have ever had.

I've been making pancakes for years now, every Saturday as a family tradition. Since I make them often I tried seeking healthy recipes, all were edible but none my family has asked me to make again. So when my in-laws came to visit I decided to find a recipe that would knock them off the feet. I googled and found Alton's instant. At first I thought, this recipe looks so simple, it can't be that great. Was I proven wrong! You can never judge a recipe by it's ingredients. This recipe was a hit! Even my husband [our pancake connoisseur] ate them and asked that I make them again. They were the right amount of fluffiness for him. I'm going to keep these as one of my "Go-To" recipes. Thanks Alton!

My husband and I just indulged in these this morning and they were delicious! I added chocolate chips and bananas to the batter as well...yum! A tip if you don't want to store the dry ingredients and just want to make enough for the batch you're making is to do a third of the dry ingredient recipe he calls for. They were light, fluffy, and had lots of flavor!

Great recipe. I leave the instant pancake mix in the cabinet at all times. We've tried it with blueberries too. Delish.

I have been looking for a good pancake recipe for a while and seeing the reviews here, decided to try this one out. It was my first attempt at making pancakes and I was excited to make them for my husband. Unfortunately, we were both very disappointed in the taste! It tastes too 'eggy' and isn't as fluffy as I had expected it to be.
I'll continue looking for and trying out other pancake recipes in the hopes of finding the one!

Thank you, Alton! With your help, I have conquered, my nemesis, the pancake! I've been cooking, & baking for years, but for some reason, a tasty, fluffy pancake has always eluded me. This recipe not only provided the classic pancake flavor, but most importantly, the texture that I was looking for.
