These are amazing! I also add old fashioned rolled oats to the dry recipe, and it takes them even higher!! We use this recipe all the time in our waffle iron, no changes necessary to the batter! For either pancakes or waffles, just add fresh blueberries and it's a glorious breakfast....

I haven't had pancakes in over 30 years, didn't like them. But I tried this recipe so I could make my man happy, and holy cow, they are scrumptious! Can't wait till Sunday to make them again!!!!!! I used frozen blueberries and cake flour, cuz that's all I had. Fluffy tasty breakfast coming up!!!

I have been on a quest to find the perfect pancake no I will look no further I have found it. I will use it for the base for any kind of pancake but you don't have to change alton's they are great.

wow I wish I would have tried these sooner, they are the BEST pancakes! Thank you Alton once again u r the king of recipes. they were so moist, fluffy, melt in your mouth, PERFECT! I have tried a few homemade pancake recipes before but hubby and kids never liked them and ended up going back to my store bought one because the 'homemade' were too heavy, dense, just not right. Everyone raved about these and I ended up making a second batch. Never will I used a store bought again : I did add a splash of vanilla to the second batch but I think I was the only one who noticed. I also used home-frozen blueberries instead of fresh, I think they were just as good as fresh.

I made the mistake of mixing warm melted butter with eggs and the eggs scrambled in the mix. I will probably use oil next time instead of butter.

These are amazing. Cooking for nearly 60 years from scratch, I can't say enough praises about these cakes. Easy to make RVing, as well. Have shared Alton's reciepe many, many times with family and friends along the way. No tweaks to make with this recipe. Thx Alton.
