    I have had my own pancake mix for years.
    I add soy flour, wheat flour and Bob's Red Mill 10 Grain Hot Cereal and use applesauce in place of fat. I tried my mix plus Alton procedure of preparation and they have turn out great! Thanks.

    I added blueberries to the batter, and the result was a nice fluffy and fruity pancake. My local store didn't have "real" buttermilk though, and the substitute stuff I got seemed much more bitter, and left a slightly more bitter pancake than I would have liked, but otherwise, I've enjoyed this recipe.

    Unlike most people I have them for dinner (not breakfast. As far as "instant" I just mix the dry ingredients in the required proportions when I cook them. (I understand what Alton was trying to do though: tell us what is in the pancake mixes that we buy.

    The best part (as always is the tips on the order to mix as well as the why's.

    I also share his conviction that only REAL maple syrup is worth having, especially darker stuff. (We once shamed a local breakfast place into carrying the real stuff after showing up every Saturday with our own container.

    These where incredible pancakes. My only warning would be to watch out for the salt. The first time I cooked this it was great but the second time I made the mix I used a different brand of Kosher salt and it came out really salty. Some salt brands have smaller flakes of kosher salt. Otherwise wow your friends and family with this easy mix.

    This recipe is awesome! I made the mix about a week ago, and just picked up the buttermilk and made them this morning with fresh blueberris. It is the best mix I have made. I used half regular flour and half wheat flour. Next time around I may try to add vanilla extract in. Kids and hubby love them. Thanks Alton!

    These were great pancakes! Alton sure knows his way around the diner's kitchen. My boys and I enjoyed cooking them together. We even tested our baking soda. You can guess what's on our shopping list. Just like Alton said, however, when the batter reached 120 degrees the bubbles started. My sons and I love to watch Alton everyday together. Thanks for the fun!
