This is the best potato soup recipe i have tried yet. One of the good things about it is that it is simple, and leaves you the freedom to customize it any way you like. Thank you Alton!

My daughter is a vegatarian. I was pleased to make this soup for her. However she stopped me after tasting it BEFORE I added the cream and buttermilk. Said she liked it just the way it was. SO, if you like a lighter version, cut back a bit on the salt and skip the dairy, it's still great!

i was so thrilled to see Mr. Brown make this soup. I was born and raised in France and my mother made this soup every winter. It is the best soup one could ever have. Since i have lived in the states, when i am home sick i make "Mom's Soup" (La soupe a maman and everything is a whole lot better. My family loves the good tastes of France.
    Enjoy :

My Entire family enjoyed this mildly spicy, yet very creamy soup. I suggest it served very hot with onion or leek rings on top (4-5.
