Followed the recipe exactly, and even added an extra tablespoon of cornstarch and let it cook longer based on the other reviews, but unfortunately it still turned out runny. The lemon flavor is delicious and doesn't taste so artificial like so many other lemon treats. It is definitely worth trying; perhaps next time I will use less water.

Only mistake Alton made was saying to "cook on low heat for 1 minute. For those who's pie filling were running... my filling was also BUT I continued to stir it over low heat until it thicken up. Iy might take 5 mins, might take 10 minutes, JUST CONTINUE TO COOK IT.
Hope my review helps someone. Favor is very good.

First time ever to make a lemon pie on Easter and again today. It was fabulous both times! I used all fresh and newly bought ingredients, had some old cornstarch but didn't trust it. The pie was not soupy at all. I did add 1 tablespoon more than recipe calls for because of reviews. It is not too tart or too sweet, just a smooth taste of lemon. My family loves it and my only regret is that I waited too long to make it.

I made this pie the other day and I have never made lemon meringue pie before and it turned out PERFECT!! It was so tasty!! I did add a little more cornstartch and it came out perfect not at all soupy. I do recommend watching the episode as well so yuo can see what he does.

Soupy is right! I read the other reviews & boiled for 2 minutes & still soupy. Disappointed because the flavors are really there (as all other reviews have also said. Sorry Mr. Brown! :(

This make a good Lemon Pie Filling. I use it a lot but I found that it needed more Lemon Zest. I have incrested to to the zest of two lemons and found it much brighter in flavor.

my first one was super soupy... but i added more cornstarch, ended up adding more lemon juice also because the lemon seemed a little subdued. : but FANTASTIC recipe i heart alton brown :

Five stars because of excellent taste and was so easy! Will keep this recipie...but we also got the "lemon soup" b/c we doubled the recipie for 2 pies. We sopped it up and ate it anyway because it was so delicious! I know where we went wrong...will BOIL HARD for one full minute next time and also will reduce water to maybe 3/4 cup for two pies. Will try again, hope it sets next time.

Mine came out soupy too, and I made two pies also. It was delicious. Maybe the cornstarch should be increased?

For those who's pie turns out soupy I recommend stirring an additional minute or two when it first starts boiling as well as when all the ingredients have been added. The custard will not curdle.
