Watch the episode on YouTube! It's FULL of tips that aren't mentioned in the recipe.

This is the first pie I've ever made and it came out great! I didn't have any problems with the filling setting up either, came out just as I expected. I do wish there was a bit more of the topping but it's still just fine the way it is! I used a pre-made pie crust that was previously frozen and that's the only thing I would change. In the episode Alton gives a recipe for a pie crust and I think I'll give that a whirl next time around. I'm definitly making this again!

how in the world does this pie have 4 stars???? like other writers i too usually read the reviews but because it was Alton Brown I figured there was no reason to...am I sorry I didn't! Pie soup is right!!! what a mess and a waste of time and food...I still ate it beacuse it does taste wonderful and if you are an experienced cook you may be able to figure out what the problem is with the lemon not setting. me and my 18 month old are the only ones that will eat it this way....what a waste!

@ sistorbot, you are correct that it states to boil the filling for the first time, but alas not the second time you put it on the heat.

I made this for my father's birthday (lemon meringue is his favorite over any cake and it came out into soup. I do follow directions the first time I attempt a recipe to the letter and it says to "Cook" for 1 minute after you temper the egg yolks. It doesn't say to boil it again. The next time I try this I will do what I normally do and treat this like the true custard this is, by bringing the tempered mixture back to a boil or at the least a simmer. I'm pretty sure this is the case most people had when they ended up with lemon meringue soup.

All in all great flavor, I just recommend cooking the filling to a boil (while stirring after the temper and this will be a great pie.

I don't understand why people keep having bad results. First time making this, it came out perfect. Gorgeous, perfectly set up. I followed the recipe exactly, except for that I did not time how long I cooked filling. My timing probably differed by 1-2 minutes.
Regardless, I feel that people who are blaming Alton's recipe for their mistakes, may very well be incorrect. Do note that the recipe says to BOIL for 1 minute, not just cook. Perhaps people did not allow the recipe to come to a full boil. Or maybe when they filled the pie crust with the filling, they waited too long to top with the meringue and begin baking. Or they could have even not let the pie cool enough before cutting.

I have only been baking for a few years, and this is my first attempt at a lemon meringue pie. I have outstanding results, and I have a feeling those of you who had under par results did not fully follow the recipe.

The flavors of this recipe are super! But, the first time I made it, I got the lemon soup as well. Next time I made it, I added the lemon juice in with corn starch liquid - perfect results! Just a hint to make the flavors of the end product come out even better!

I made this for Pi Day (3/14 and it was great! I am not a good meringue decorator but it was a success nevertheless. Alton comes through again with another simple, classic recipe that is easy to follow yet delicious, tasty and comes together well. I'm totally confused as to why so many comments about it not setting up... mine did great.

I also had the same results as others, very disappointed. I followed the recipe to a T. The filling never did set use like cream soup.
Alton you need to go back and review this recipe.
