If using homemade chicken stock, salt will not be an issue. My mother especially liked the soup, my husband is a little harder to please but he still gave it a thumbs up! We garnished with light sour cream and fresh parsley from the garden. I followed the recipe as it was the first time. Next time I will probably cut back a little on the cumin (personal preference and add a more of the grains of paradise (hard to find but I wanted to try it, purchased online and probably a bit more tomato and who knows maybe a few of the other things people have tried!

This recipe was a huge hit with my non-lentil eating family. I added kielbasa and kale to the finished product and served over quinoa. Amazing dinner! I sent this recipe to my family and vegetarian sister. They will love it. If my 2 year old ate it up ... You should try it.

I loved this recipe. I altered it a bit. After sweating the mir poix I added the aromatics, including three roughly chopped garlic cloves, and cranked the heat. Then I deglazed the pan with sherry and let it go sec. Then in went the tomatoes followed by the lentils. I noticed that people were complaining about the saltiness. Make sure you use home made or low sodium broth, that ought to fix that problem.

    Delicate and delicious!

I was looking for a light lentil soup recipe based on natural ingredients. This was perfect. I don't have grains of paradise, so I combined 1tsp fresh ground black pepper, 1tsp ground cardamom and about 1 tbsp fresh grated ginger as a substitute. Outside of that the only addition was some small cubes of white potatoes since this was served as a main course.

The fresh chopped tomatoes added a bit of tang and the cumin added a middle eastern twist.

I used home made chicken broth. I think some of the comments stating the soup is too salty may have used purchased broth which already has salt so take that into account. The potato may have also helped.

The beauty of this soup is the light, clean taste, without processed ingredients or other heavy flavors (like garlic. I highly recommend making it as written, the first time. Take it where you want after that.

Served with a fresh loaf of bread and butter. It was delicious!

Mr. Brown, you did it again. This soup was easy to make and delicious.
After reading the reviews, I used a pinch of salt instead of using 2 teaspoons and that was enough salt for the entire pot of soup. The recipe itself is very basic so you can add anything you want. I added garlic, kale, and basil leaves. And since I didn't have grains of paradise, I did some research and found that the spice is peppery, citrus, and has ginger undertones, so I added freshly cracked pepper, lemon zest, and freshly grated ginger to substitute that mysterious spice. The possibilities to flavor this soup are endless.
I blended 1/3 of it for dinner and the other 2/3 were left whole and I froze it. Blended or not blended, both versions are great regardless of the texture profile.
I topped my yummy soup with creme fraiche and cilantro. It was AMAZING. Definitely going to make this again.

Good, simple, healthy dish. Easy to customize with lots of good tips from other reviewers. Personally, I sub'd the black pepper, added garlic and bay leaves as stated by others, but the big difference was I used a can of Rotel (TM in place of the tomatoes. This gave it a good spicy flavor, but not overwhelmingly hot.

Love this soup! I used a combination of red/green lentils, added fresh garlic and used pepper in place of the grains of paradise. I agree with others, don't blend it. I've made it numerous times! Thank you Alton for a great, simple recipe!

Quick fix and very good. I agree with another review that you can hold back a little on the salt....add to taste.
