    These are great. A note tho. When you shred then drain you will notice they look gray. Rinse in water and drain once with a salad spinner then dry with towel. They also freeze well so I shred a months worth then toss them in a zip top bag and freeze. Also, freeze in a small layer so they break apart easily later.

    Thanks a lot. I lost a bet with my husband that I could cook hashbrowns crispy and cooked all the way through in 5 minutes per side like this recipe says. Some were crispy, some were still raw.
    However, this is still my go-to recipe for hashbrowns, they are quick (but not as quick as recipe says and easy. Better than any frozen hashbrowns from the grocery store anyday.

    I actually never thought of squeezing out the water in a towel before...thats brilliant! Im cooking this for my kids breakfast in the morning they will love it!! I used my stovetop cast iron griddle to cook them, and had to incerase to med heat to start then reduce to med lo because of how thick it is!!!

    Delish. I too added onion (2 T., and I wanted a "patatas bravas" flavor so I threw in a pinch of smoked paprika. But the procedure and cooking instructions produced the first crispy hash browns I've ever cooked from scratch!

    I used the onion and food processor suggestions and they turned out well. When frying, do not crowd the pan. This recipe goes well with anything on the grill.

    After you shred them, soak them in a littled salted cold water, to get the starch off of them. Then I wring them in a towel like Alton did. No more gummy potatoes!!!! : : : A well known Fast Food Eatery place soaks their potatoes in cold salted water also!!! : : :

    Followed the recipe exactly, but potatoes took forever to cook and came out grey. Not sure what went wrong as I usually love Alton's recipes.
