I used the onion and food processor suggestions and they turned out well. When frying, do not crowd the pan. This recipe goes well with anything on the grill.

After you shred them, soak them in a littled salted cold water, to get the starch off of them. Then I wring them in a towel like Alton did. No more gummy potatoes!!!! : : : A well known Fast Food Eatery place soaks their potatoes in cold salted water also!!! : : :

I have struggled at making simple hash browns forever. This simple recipe works. Why didn't I think to strain out the excess liquid from the potatoes? The only heads up I would provide is that you need to keep the ounces of potato to pan size in the proper ratio. Don't exceed a 1oz. to 4in. ratio. Ideal is 1oz. to 8in. i.e. If your pan circumference is 32 inches you should use between 4oz. and 8oz. of potatoes. If you keep the ratio you get the crispness.

I tried to make hash browns a long time ago and they were a gooey disaster, thanks Alton. I read the reviews and got a little scared my hash browns would go grey.. so I followed along with the episode when I made them. TV time obviously makes things go faster, but I tried to do all the prep as fast as possible and this may have helped. It took a lot of wringing to get all the moisture out of the potatoes and it paid off.

1. Peel the potatoes. This will prevent the graying prolem.
2. Use food processor shredder, if you have one.
3. Add onions - up to 1/3 or so of the weight of the potatoes. Just shred them with the potatoes in the Food Processor and wring out the moisture too.
4. The serving size is too small.
5. Make a bigger batch of the potatoes and onions, freeze the rest, The frozen potatoes will take a little longer to cook. With the food processor, it's just as easy to do two or three (or ten potatoes and some onions as it is for one serving.

No offense Alton, but as a female I did watch the "man" episode where you prepared this dish. With the food processor to do the shredding, I can have this delicious dish on the table in 15 minutes. Thanks!

I rinsed the potatoes in a strainer after they were shredded, squeezed out all the liquid, added butter to the bacon grease, and cooked them until tender.
