This was incredible! I more than doubled the mushrooms (2 16oz pkgs of baby bellas and kept everything else the same. Cooked the noodles the traditional way though. Seasoned liberally with s&p throughout the process. This tasted and looked like restaurant quality. My carnivore boyfriend didn't miss the meat. He went back for seconds. I don't think I would have been as pleased if I hadn't used more shrooms. That helped to make it very hearty and filling. Loved it! Thanks, Alton!

Super simple and absolutely delicious! Had to substitute the sour cream for greek yogurt because after I had started cooking, I realized that I had no sour cream! Worked out well though.

Absolutely delicious. Used angel hair as I'm not partial to flat, fat noodles. Next time I'll use extra fine egg noodles and keep sauce separate as the noodles really soak it up. I am looking forward to making this as a meat dish, too. Added garlic to mine and used 1 can consomme with about a 1/4 C. water. Wonderful!

Made this recipe tonight. Fantastic. And no...you don't miss the meat! You can actually double the mushrooms with the rest of the ingredients left as they are. Just saute them in batches. Make sure you get a real good sear on the mushrooms! It really does make a difference in the taste and overall success of the dish. I used about half of the goat cheese that it called for because mine was extremely "goaty". : A great recipe which I am looking forward to making again!

After making this recipe I went back and read the reviews. Still a bit in a quandry as to why it seems to have been a pretty big hit with some. I like goat cheese, I love mushrooms and sour cream is certainly nothing to complain about. It was a comforting dish, but extraordinary, no, not at all. Anymore, I like spicy dishes and maybe that this old fashioned recipe isn't my cup of tea. It is something warm creamy and smooth but it lacks much taste.

Reminds me alot of my grandmother's chicken and noodles that I thought were wonderful as a kid 40 years ago, but now even that has little taste and reminds me of basic 60s home cooking. It is kind of a fill 'em up and keep them satisfied but don't worry about creating a special moment with my taste buds.

With the exception of the goat cheese it didn't differ from the other (many stroganoff recipes I've tried in the past. But the execution and ingredients were a home run for me. This one does it for sure. Over fresh, home-made pasta it was unbeatable for meatless Monday. Thanks, Alton!

This recipe is like all of Alton's recipes - terrific! It's really easy and super delicious. Don't be afraid of the goat cheese. It smells a little gamey when you're adding it, but it tastes perfect when the recipe is done. Yum!

A fellow foodie made this and let me try it. Can't wait to make it myself. Wouldn't change a thing except maybe a few more mushrooms. Awesome Alton!
