    because alton is my hero! the dressing had a pasty texture on my tongue. i think it may be related to the parmesan cheese (i used reggiano and/or how my blender chopped it up. overall taste was okay, nothing to die for. i like ina's caesar but it has soooo much more fat and calories. i was hoping this would have a similar taste.

    This is one of the best Caesar dressings I've had.

    There are vegetarian Worcestershire sauces available, I used one in this recipe.

    I found this under the 'vegetarian' search, but worchestershire is not vegetarian because it contains anchovies. If you're making this recipe for a vegetarian, you may want to find an alternate ingredient.

    I can't believe how delicious this is. I only used one garlic and it was a bit garlic-y for me, and I think I also used half the dijon. Still, I will definitely make this again and again. I didn't add a lot of oil and it had consistency of hummus, so I can see myself having this as a substitute for hummus with some pita. I also used it as a dip for grilled veggies. Thanks, Alton!

    This is fantastic! Even my husband, who thinks I'm trying to poison him with "health food", loves this dressing. It has all the yummy characteristics of Caesar dressing. I add a bit of extra salt or if you really want to go authentic, add a bit of anchovy paste. (It's very inexpensive and comes in a tube. Save the rest for puttanesca. This is a staple in our fridge.

    I'm so thrilled to have found this recipe. It tastes great and is so creamy. My daughter is vegetarian and loves caesar salads. The tofu makes me happy because she gets protein and no anchovies makes her happy. It came out just a touch spicy so next time I'll try cutting back on the dijon mustard and try the lemon juice like others have suggested.

    My 11 yr old daughter lives on salad, and loves my traditional Caesar dressing with the egg yolk and lots of EVOO. I tried this today, although I only had silken firm tofu. I added a little low sodium chicken broth to thin it out and...It was a WINNER! She loved it and I thought it was quite tasty too!

    I read the reviews, tried the recipe, and everyone in the family gave it five stars! I did add the juice of half a lemon. It made 2 cups (16 oz of dressing. It tasted like a classic caesar dressing! Way to go Alton!!

    I have a friend who can never find that good restaurant quality dressing in the stores. I loved this recipe so I made it. After I told him there was tofu in it, he wasn't as pleased, but still enjoyed it! Sort of expensive to make but absolutely worth every penny. Makes a lot!

    Timid w/ anchovies, I LOVED this recipe! I was hesitant because of silken tofu also, but Alton Brown knocks one outta the park with this delight! My girlfriend raves about this all the time. A definite must-have for your recipe book.
