This receipe requires a lot of your time. My onions burned very quickly and had to do a new batch. It also seemed I did not have enough sauce so I had to make more to try to cover the beans. This is a healthier alternative but I found it to be very time consuming. The flavor was ok. I added worcheshire sauce to the cream which helped the flavor. I may stick with the older Campbell's version next time. This is a good receipe for pot luck if you are not preparing anything else.

Excellent! I am not a very good cook. I was worried about everyone's comments about burning the onions so I decided to fry my own onions (mandolin onions very thin; dipped in heavy cream; dipped in pancake mix, chili powder, garlic, salt and paprika; pan fried in canola oil. My husband's family absolutely LOVED the casserole. I had doubled the recipe as well.
I would suggest if some people don't like mushrooms themselves to maybe do a little less mushroom or do the mushroom mixture and then strain some out. Some people are just very picky though. I'm not a fan of mushrooms so I just diced them up pretty small and they didn't bother me.

I forwent making my own fried onions since I <3 French's so much anyway. Whew, this recipe is much more time consuming vs. the Campbell's can version but so worth it! I always made my casserole with fresh beans anyway but now making the sauce also makes all the difference. My BF devoured it.

Everyone really enjoyed this. The sauce was similar to a light gravy. 'Tossing' the onions doesn't work very well with their coating, instead, I found that flipping them with a spatula every 15 mins instead of every 10 minutes, and adding an additional 15 mins got them to a nice golden brown like the recipe calls for.

    Alterations made to this dish:
*Slivered almonds complimented this dish nicely. I added a layer on top of the casserole for the last ten minutes that the dish was in the oven to toast it. I would recommend a little longer, maybe another 5 minutes for better toasting.
*I also garnished the casserole with frenches onions. Making additional onions available is nice for those of us that like more onions =
*I used less than a gallon of water per pound of green beans for boiling. A gallon is a little too much.
*I would recommend about three trays of ice per pound of green beans for blanching. Two worked for me, but I had to 'toss' the ice with the green beans.

Really good! Trying to brown & crisp 2 onions at the same time was a mistake. I will do one smaller batches of onions in the oven next time. Everyone liked it at our Thanksgiving feast!!

The mushroom soup recipe is great. Make sure you snap the beans fairly small. I found some great packaged "Peppered Garlic" onions in the produce department of the grocery store. Last year I made the crispy onion topping, but it just took to long to get them done. This is a good recipe and so much better than Campbell soup and frozen french green beans, as my mother used to make.

After years of the same boring but traditional green bean casserole on the Thanksgiving dinner table, I was looking for something new. Everyone LOVED it - there were no leftovers! After reading other reviews, I did use canned onions to save time and it was still delicious. You rock, Alton!

The best green bean casserole ever! I used all organic ingredients and it was delicious. A litle work but worth the effort.

This is wonderful. Perfect name, forget the slushy pasty traditional casserole. Nice crisp beans, awesome mushrooms. I've never had people crowd around the stove stealing parts of a green bean casserole. Converted my wife who hates the traditional dish. We did cheat and use french's onions, which I thought worked great. Especially because the oven was already busy.
