    Excellent! My family loved it. Couple changes. I used 3 pieces of bacon (wanted to use them up anyhow - fried them up and then sauteed mushrooms in bacon fat. I used non fat half and half and the flavor was fine. I also sub. half a cup of brandy for half of the chicken stock. Didn't attempt the onions since many others recommended not using them. I just used the canned ones and sprinkled them on top only.

    I heart this recipe. I used it the last two years in a row and both sides of the family continue to request it! Both years I went to Trader Joes and got their can of "Fried Onion Pieces". I STILL attempt the onions but always seem to end up using only half that make it. Either way, this recipe is GREAT. I will be substituting the half and half with greek yogurt/Nonfat sour cream mixture and no sodium chicken broth for a healthier version this year.
    @Jmamadukes: I think it's completely up to you. I buy a .8oz can of Trader Joes version of Fried Onions (they are way more crunchy and just added 1/4 cup to MIX throughout the recipe. I decided to add a little more to my liking as I stirred the beans as my fam likes a 'chunky' casserole. I added at least 1/2 cup to the top I'm not shy with them though, so I recommend starting off with a smaller amount and adding it little by little so you can't go wrong.     I can not for the life of me figure out how to keep the onions from burning. They burn slightly when I make them initially. Then they burn when they're on the casserole when it's baking.
    Excellent recipe otherwise. Might suggest French's, though. Happy holidays with this one.

    Made this last Thanksgiving and it was so popular that it was requested again. Last year, no problems with onions in the oven, but this year was not so smooth. So on my second try I pan fried them in 1T butter + 1T oil, in a nonstick pan over med. high heat. They browned nicely and were crispy. Success! I also go a little heavy on the green beans. Thx AB for a new holiday tradition in my family; that's a hard circle to break into!

    Help!! Making this tomorrow and am planning on using the canned fried onions rather than attempt my own. How much of the canned fried onions do I use??

    I was looking for something really good to make and I sure found it!!!!! like everyone else said, you definitely need to watch the onions. Only a few slices of mine burned so it wasn't a big deal. Those fried onion things in a can kind of scare me so I'm really glad I found a recipe using fresh ingredients instead of having everything canned and gross. Thanks Alton Brown!

    Haven't eaten it yet but spent all morning trying to perfect the onion situation after reading all of the reviews.
    I used the mandolin. Used convection (400 degrees. Flip them constantly for 20 min. Sprayed them with more cooking spray when I thought they needed it. Picked out the ones that were done when others weren't. Geez............I hope it tastes really good!! But the onions are BEAUTIFUL.

    This recipe is awesome! I think the family will love it for T-day. Btw, the video for this is NOT helpful if you're using Alton's recipe because it's not his recipe. (Instead of non-stick cooking spray, i cheated and used crisco.

    Love this recipe! I have always loved green bean casserole but I will never use the old recipe again. Like everyone else, I use the french's fried onions! Thanks Alton!
