Fabulous! Will be my new go to recipe for onion dip. I did add extra onion and tweaked the spices to suit my family's palate, the dip would have been great with no changes at all. Thank you Alton!

This recipe improves with overnight refrigeration. I used minced garlic with 4 small onions minced in the food processor, browning the onions so that they were kind of crispy before mixing with the rest of the ingredients -minus the garlic powder- and that seemed to make the difference with the oniony flavor I was looking for. Very good on its own and also a great jumping off point for variations as the other reviewers have noted. On a separate note, does anyone know why minced onions sometimes turn green before browning when you fry them?

Like many others I increased the amount of garlic powder by maybe 3 times what the recipe calls for. Personal preference I suppose.
Also, I did not add salt to the dip once all mixed together. I found the salt added to the onions was sufficient, especially since you will most likely eat this dip on salty chips.
I set the dip up, and served it perhaps 2 hours later. It was good. People enjoyed it, and it had a much fresher taste than the powder.
The next day, I was snacking on leftovers.....Needless to say, I will not be serving this dip unless I make it a day in advance. It was SO GOOD. The flavor as spot on. It no longer tasted like it had too much mayo. The onion flavor was perfect. I couldn't believe the overnight transformation.
I can't wait to have guests again so I can make it and serve it properly!

The only change I made was to substitute 1 Tbsp of olive oil for butter. It helped the onions get great color.

I typically don't eat onion dip at parties because of the chemical aftertaste of the powdered envelope type dip mix. I recently went to a birthday party and saw REAL onions in the dip so I took a chance. When I asked the host about her dip, she said this recipe was almost as easy as the pre-packaged stuff and so I had to try it and YES, it was very easy and so flavorful. I upped the onion to cream ratio and added a tad more kosher salt to taste. My go-to dip from now on!

Onion dip is my favorite for pita chips and veggies, but I hate all the yucky stuff that's in the boxed mixes. This is SO much better. I halved the recipe, used light sour cream and no mayo, and I didn't think it was bland at all. The subtlety of the caramelized onion flavor is what makes it so good. Next time, I will double the recipe!

This is a good base for an onion dip, but it needs LOTS more. I doubled the amount of onions. I added more garlic powder and more salt and pepper. To add more kick, I added some hot sauce and some red pepper flakes. It was delicious and was completely devoured in about an hour.

i was never a fan of onion dip, until now! So much better than store bought. The carmelized onions really make it. For those of you who think its too bland, just adjust to taste! and it is a great base for adding other seasonings if you are feeling creative!
