This recipe just needs practice. Overnight means overnight..not any longer...pumpkin doesn't hold up well overnight, but nuts and dried fruit do...add the pumpkin in the morning...great wAy to start the day..yummy smells in the morning and breakfast ready to go....Thanks, Alton....

Turned mushy. And as for the person that said to address the difference between a crock pot and a slow cooker, there is none. Crock pot is the brand name (like kleenex that have become one with the product (a slow cooker, a facial tissue. I think like other reviews state it depends on the temperature of your low. My pot is newer and I will try this again on warm instead.

I didn't use figs (didn't have any on hand and didn't use cranberries... I tried my best to modify it for a diabetic, but it really just came out very mushy and pasty. I ended up cutting the time before it burned. Just not what I was hoping for...

I made this recipe exactly as instructed and I have to say, although I enjoyed it, something seems to be missing. I should note though that I am the only one that enjoyed it. Neither my husband nor daughter would touch it. After a few tentative bites they both decided it was "mushy" and neither liked the figs. Oh well. I love Alton Brown, but I'm not creative enough to make this work for my family. Best of luck to everyone else.

I made the recipe as is (except for the figs which were not easily found and my oatmeal seemed to burn after leaving it as long as instructed. After making this recipe multiple times, I found that it works better if I double the recipe and only cook on low for around 7 hours. (This may be because of my slow cooker. I have also used different fruit like chopped apples and it works great. I will definitely make again.

One thing I have noticed about al the reviews is that no one has mentioned the difference between slow cookers and crock pots. There is a big difference when cooking with these two devices. I haven't tried it yet but will definitely use my slow cooker first since it cooks at a lower temperature and doesn't need as much in it to cook properly. Thanks to everyone for all their great suggestions.

I've made this several times in the winter and it's so hearty and delicious. I love the texture of steel cut oats.

This is a winner. It works well with any dried fruit. I love a mixture of dried cherries, cranberies, chopped appricots, raisens. This mixture makes it not only a treat for the pallete, but also for the eyes. Also, the fruit cooked in it overnight disperses enough sweetener that sugar or syrup is not necessary. (It will be too soupy in the morning if you don't use dried fruit, which absorbs some of the moisture.

This recipe did not work well for me. I followed the recipe with a couple adjustments per comments below, but it still came out runny, bland, and mushy. Sorry Alton - not good eats.
