I first ate this steak at a friend's home and it was outstanding. I have been trying to catch up with him for the past few weeks (he travels and finally he forwarded it to me. I plan to use the recipe when some friends come over sometime within the next two weeks. Keep these good recipes coming.

I've cooked many steaks many different ways, and I have eaten steak at many posh, and expensive restaurants. These steaks were the best I ever had.

After reading the reviews about the amount of smoke, I decided to use a Turkey Fryer base to heat the pan then finished off by moving pan to a Gas Grill. The amount of smoke then is no problem. With the fryer base I was able to get searing temps over 1000 degrees. Best Steak I've ever had.

This worked exactly as described. I left the steak in the oven three min and let it rest three min. It cam out just under Medium. The crust was perfect too. You did it again Alton

Good Eats was my favorite show. I cannot watch it anymore but I will never forget this recipe. It is the best I mean THE BEST way of cooking steak. I can almost cook if not better steaks with this method than Donovan's Steak and Chop House! I love Alton Brown but I was too lazy to get in the line to meet him at Fashion Valley Mall in San Diego, sorry Alton :( I have taken his picture though :
