    Great way to prepare. If you're a slacker like me and don't pull the steak out early enough to let it warm up all the way to (near room temperature before cooking, you'll probably need to adjust the time a bit. I seared each side for close to a minute, then went 3 per side in the oven, came out perfect medium rare.

    After cooking, I deglazed the pan with some red wine and used that to season some carrots and onions I'd been roasting in another cast iron. Served the rib-eye with some house mole sauce I picked up at the local tienda. Fantastic.

    I used to be a grill-snob for good steaks, but this is the BEST way to cook a ribeye! Unbelievably juicy and tender. The only negative is, my cast iron skillet tended to smoke quite a bit. It was worth the trade off!

    I have to say that when I need a recipe whether it be a new take on an old favorite or something I've never tried before, Alton Brown is my go to guy. And, just like always, this steak is fantastic, tender and juicy, but with that great sear that you get at a really good steak house. Since I found and tried this particular recipe, my husband prefers that we buy and cook our own steaks because none of the local steakhouses can even come close to the taste of this recipe. I also urge everyone to try his recipe for mac and cheese. I tried it last year for Thanksgiving (no one wants to put boxed mac and cheese on the table for a holiday dinner and it was a real hit with my grown children. Even my 2 and 5 year old grandchildren asked for seconds and thirds. Keep the recipes coming and I will keep trying them.

    This recipe rocks!! Alton Brown does it again. I did what everyone says including cooking the meat longer and adding butter. the steak turned out to be awesome !!! both kids gobbled everything up. Thanks Alton again.

    Alton...I truly owe you the "I'm not worthy" bow I received tonight!! My boyfriend and I have taken on the whole "Iron Chef" experience and we challenge each other on a regular basis. Yep...lol...we're competitive...but it's all in the name of great food!~ I cooked this steak tonight and he proclaimed me the winner!! I wanted a perfect medium steak so I thought I'd share what I did to make that happen. I seared the room temp steak for 45 seconds per side. Then I put it in the 500 degree oven for 3 and a half minutes (the first side and then only 3 minutes the second side. I took it out and covered with aluminum foil to set as usual. I siced it into medium slices instead of thin. It was the MOST AMAZING steak ever!! ~ I can't thank you enough!!

    This was AMAZING!!! Rib eye steak is my husbands favorite. Usually I lightly oil, season and we grill them outside. But tonight, it was pouring rain and I was looking for an alternative when I found this recipe. Well, forget the grill!!! This was awesome! I put a little butter on the steak. Served it with my version of a Wedge Salad, a great bottle of red wine and the rest is tasty history. We can't wait to try this out on lamb chops! Thanks, Alton! And, our two big dogs were salivating beside the dining room table. They have NEVER done that before.

    Thank you Alton! As someone who doesn't eat red meat, I had no clue how to cook a ribeye for my boyfriend. This recipe was not only easy to follow, but he said it was one of the best tasting steaks he's ever had and it was cooked to the perfect temperature. Thanks for making a woman look like she knows how to cook!

    This was the best and easiest way to cook a steak! I have tried to cook steaks before but never had it as juicy and delicious as this one was! I didn't experience any smoking from the oven, so delicious! I can't get over it!

    Anytime an oven is heated that high, it will smoke unless it is very clean.
    This is much better than grilled in my opinion!

    This recipe is absolutely unbelievable. I am huge steak eater and that was by far the best steak I've made at home. No more grillin my steaks. I am hooked. Thanks Alton.
