    How in the world did I ever doubt you Alton??? We recently purchased a naturally raised 4-H Angus steer, a Regional Champion no less. My husband could not get the Big Green Egg working....never let the charcoal get wet through the winter!!! So I did Filet in an iron skillet, with bacon wrapped around it. TOTALLY AWESOME!!! Very very easy as well.

    Holy Cow!! (pun intended This recipe is amazing!!! And as advertised the smoke is ridiculous. If you live in an apartment, be prepared.

    Back to the steak. Better than 95% of restaurants. Outside of the top of the line steak houses (Ruth's Chris, Mortons etc this steak is better than the rest!

    Just tried this one for the first time. I agree on the smoke comments. Consider the times as starting points. Those times made for a VERY rare steak... for me, but I'm sure that those times make them burned for others. But the method is great! This is now in my cookbook.

    This is a great recipe....if you want to meet the local fire department. Don't get me wrong, it produces a delicious steak...and copius amounts of smoke as the steak sears. If you have an alarm system, it will get set off, and they will send the fire department, so if you use this recipe, make sure you put enough steaks on to feed the nice firemen who show up to put out the fire!

    Yummy! Great method if you don't want to fire up the grill. Also more consistent than the grill. Open some windows, this will smoke up the house.

    Timing was perfect. Two ribeyes sat in the discounted meat bin at the store...Turned two $5.00 ribeyes, into the best steaks we've ever had.

    Great way to cook a restaurant quality steak at home. Quick & easy. Add a little more salt than you think you need. Also, to get a better sear on the meat, try using a brick wrapped in foil and just leave it there when you put it in the oven.
