Fantastic steak preparation! I marinated the ribeyes for about an hour with a little Smokehouse rub from Williams Sonoma and then followed the recipe. It smoked like crazy so I kept the windows open. The second steak I prepared I lowered the stovetop to medium high which helped with the smoke and the steak still came out perfect. Well done Alton!!!

I followed this recipe with a little variation. I substituted olive oil and I added a little bit of Dale's seasoning. It was really tasty, but it came out really rare. I ate it anyway, but I think the time needs to be adjusted one minute per side to achieve a perfect medium rare. Oh well, trial and error baby!! Will know next time:

This was definitely an easy way to cook a steak indoors without a grill. I did not have any problem with smoke, just put on the overhead fan and opened a door, and used vegetable oil. My boyfriend likes his steak medium to medium well, so I cooked the ribeye 30-30-3-3 and it let it sit at least 5 minutes. The steak was definitely tender and juicy, but it lacked alot of flavor and came out only medium rare. There also wasn't a great crust on the outside of the ribeye that other users raved about. I think next time I will cook on the stove top 1 min per side and in the oven 3 per side. In addition, next time I will use more seasoning as it was a little bland. All in all, I will definitely make this again.

WOW... I've been experimenting with many different ways to prepare my steaks and this was THE BEST method ever. This method was fast and my steaks were of steakhouse quality. I think I'll be dining at home more often. WOW

This was the BEST steak I have ever eaten in my life! Both myself and a friend of mine frequent steakhouses quite a bit. We waste a lot of money doing so. I used to make steak all of the time and told her that I would cook one up for her instead. I watched the video and tried this recipe with my cast iron pan. We both agreed: it far surpasses the steakhouses and it is better than any steak I've previously made - and I used to cook a lot. THANK YOU Alton Brown. This is the most absolute best and easiest indoor steak. Very flavorful - the juice fills the plate. I cooked mine to medium. Wow!! I live in a smaller home these days and smoke filled the kitchen when the steak hit the pan, but it was well worth the smoke adventure!! YUM!

This is absolutely amazing. I was very worried that it was gonna burn, but boy was I wrong! It was so perfect. I don't even like steak that much, but I want to eat this everyday :

The ribeyes I made for me and my husband were the best. This is definitely the best way I have found to cook steaks next to grilling. I can't describe how succulent and juicy these were. I have never made a good steak indoors before, and now they are awesome every time. Thank you!

This has got to be the best method for cooking steak! I tried it for the first time with a NY strip and it was delish! I am never disappointed when I seek out Alton's recipes!
I tossed in some sliced onions and mushrooms when I put it in the oven and melted some white American cheese on top and it was so good!

I grill my steaks outside over charcoal all the time, but it was raining and had to cook inside. Well, I cooked the rib eye just as you said and it was GREAT. I'll do that again. Thank You. It's just missing that charcoal flavor.
