    The beats were great, took alot of time, but worth the effort. The only problem I encountered was the cooking time. The recipe states 40 minutes, but at 40 minutes, they were still hard. I put them in for an extra 20, but I believe that an extra 30 minutes would have been right on. Other than that, the flavor was perfect!

    I have made this 3 times and we just love it. I did it the first time with yellow/gold beets and they were just lovely. The flavor is wonderful. I made red next and used the two colors on a relish tray. I have also used the beets as the "pickle" in tarter sauce. It made a lighter flavored and different color for grilled fish. This is great if you have friends over from Sweden as we did. They love their beets.

    Sitting right next to firecrackers! Terrific, simple recipe. And the clean-up was easier than I expected, although if you're going out that night, use gloves (the red on my hands came out fully the next morning.

    I like pickled beets anyway, but this recipe was easy and very very tasty. The tarragon vinegar adds great flavor, but I imagine any very good white wine vinegar would do well, too. I soaked hard-boiled eggs (i know, that's another show in the leftover juice overnight. Not only was it pretty, but the taste was awesome. Spread the pickled beets on a serving plater along with the onion, crumble blue cheese on top and decorate with slice eggs coloured red from the beet juice. Gorgeous looking and tasting too! BTW, I think in the show Alton said that the beets would last 4 weeks max IN THE FRIDGE!

    I tried this recipe for the second batch of pickled beets this season. I had been given a bottle of tarragon vinegar last Christmas. For sure, the tarragon flavor real makes this recipe. I highly recommend it.
