    My husband loves pineapple upside-down cake. I had never made it, so I decided to try for our family Christmas party. He immediately went for the cake and, after tasting it, said it was the best he had ever had. All the others at the party also loved it. Even his mother, who doesn't like much, saved some for the next day.

    .....Had it all done in less than 2 hours ... used walnuts as the nuts....Yummy!

    What a great cake, easy to make and very tasty. It lasted a few hours before the entire cake was devoured by my family. The cake has more ?texture? than other cakes but that?s not a bad thing. I may try adding a little rum to the recipe next time I make it and I WILL be making it very soon. Yum. Yum. Yum.

    Everytime I make this cake it turns out great and everyone loves it. Every since Alton recommended I invest in a cast-iron skillet it has made my culinary skills so much better. Thanks AB

    I made this dish today and everyone
    thought it was great. The only problem
    I encountered was in mixing the cornmeal with the hot milk. It was really stiff, more than on the show. So, I ended up adding one cup of milk
    to the one cup of cornmeal and that seems to have done the trick. The bottom (the cornmeal did'nt brown
    like Alton's did on the show, it was light like a corn muffin, but moist and tasty.

    Col. Bob sure knows authentic southern cake! Man, oh, man, this is good stuff. It came together perfectly, and is much better than any other pineapple upside down cake I have ever had. Way to go, Col. Bob!

    I Made this in a lodge chicken fry pan. I also used fresh pinapple.
    I really liked the cornmeal texture of the cake. I never made a upside down cake before, but it was easy and good.
