I used a pomegranate juice called Lowell from World Market, which was not from concentrate. I too added more sugar as well as cherry vodka to make some upscale jello shots: 3c pom juice, 3+ packets gelatin, 1/2 cup sugar, and then mixed in 1 cup cherry vodka at the stage when Alton mixes in his arils. Easy and delicious!

We've used this recipe twice now using POM and both times it's come out wonderfully. I don't know what we're doing differently (we use Knorr unflavored gelatin if that makes a difference, but I thought I'd throw it out there that it can be done using POM.

I could not for the life of me find Pomegranate juice that actually wasn't from concentrate. I did however, find 100% Black Cherry juice. I used that, and it's pretty tasty. My mom thought it was a bit on the bitter side, but I rather liked the taste. It's not overly sweet, but if you want it a little sweeter, add more sugar.

As the person under me noted, Pom didn't work for this recipe. That's because Pom is made from Pomegranate concentrate, it's not 100% juice like it claims on the front of the bottle. Make sure to read the back of the bottle before trying this recipe.

Lauren I am an experienced cook and I followed the directions to the letter including making sure my pomegranate juice was not from concentrate. When I added the 2 envelopes unflavored gelatin to the pomegranate juice it turned the color of the vibrant Wonderful Pom juice to a brown color similar to that of milk chocolate, most unappealing. The end product was way too gelatinous...extremely rubbery. You described it as, "...horrible, dense brown block." I couldn't agree with you more. But being that this was a recipe from Alton Brown I decided to serve it anyway and hope for the best. I managed to cut a sliver and gave everyone a taste. NOT GOOD. Besides looking unappealing, the texture was extremely dense. It was so rubbery it could have been cut into cubes. UGH not the beautiful mold shown it the picture I had hoped for. The taste was very bland. All agreed, we sent it to the trash.

This recipe is so labor-intensive (I have to make my own juice I figured I wouldn't make it more than once. It turned out so perfectly I've ended up making it regularly for months. It looks fancy, so it works if you need an special occasion dessert. It's incredibly healthy and works when I'm making desserts for people who need fat-free or gluten-free food. I even made it without the extra seeds when my kids had upset stomachs and couldn't handle solid foods yet. An absolutely delicious recipe!

I failed to read the "not from concentrate" part of this recipe, and while my mold isn't yet done, I don't have high hopes for this. Because I never buy juice from concentrate, I did look for real pomegranate juice but couldn't find any. Anywhere. Where did you get yours?

Make a nice and classy dessert when served with a dollop of Lebne (middle eastern thickened yogurt cheese or home made yogurt cheese. Amint leaf to garnish and you're ready to impress.

When Alton said this wouldn't work with concentrate, he was serious. My dad accidently got concentrated pomegranate juice and it ended up being this horrible, dense brown block. If you can't find juice that isn't concentrate, take the time and make your own, it's worth it.
