    I used lamp, pork, and venison with this recipe. Was truly cleaning out the freezer and used AB's - AKA Grumpy Gus's - mantra of "the cheaper meat the better." I used a dutch oven and masa harina rather than tortilla chips and it turned out great, if a bit hot since I added to the chile (with an "e" factor some. That'll wake you up in the morning. Great mouth feel as well.

    This was so good and relatively easy to make. I don't own a pressure cooker, so I simmered it in a crock pot for 15 hours. It turned out very good! I made it for a family barbeque and it got rave reviews!

    maybe it was the salsa i used or the tomato paste, but the chili was really bitter tasting. was sooo disappointed after reading all the great reviews.

    I made this chili in a slow cooker, and I let it cook for 24 hours on low. I used Alton's chili powder recipe, which I like very much. The resulting chili had good flavor, but alas, no vegetables. I realize that you can't slow cook or pressure cook vegetables or you'll end up with onion-and-bell-pepper mush. So while the chili was cooking, I squished canned whole tomatoes in my hands, sauteed a yellow onion and a green bell pepper, and stored those ingredients in the refrigerator until the chili was cooked. I then added the vegetables and let the chili sit, quite warm in the slow cooker, for a while. Big improvement. I've made this chili for clients (I'm a personal chef, and it's popular. The homemade chili powder makes the flavor really smoky and flavorful.

    After watching this highly entertaining episode, I was inspired to buy a pressure cooker (got a great deal on eBay! This was the first recipe I tried with my new gadget, and what a hit it was! Despite the fact that I was just learning to use the pressure cooker (and as a result scorched the bottom a bit, the resulting chili was excellent! I did make my own chili powder (according to Alton's instructions, and otherwise followed the recipe exactly. Not only did my husband and I think this was good eats, but my neighbor (and shameless foodie stated that it was the best chili he'd ever eaten. High marks indeed! I highly recommend this recipe for ease of preparation and stellar results.

    WOW!! I made this recipe for my wife the other day and the flavor in this chili is almost too good to be true. It is the perfect balance of hearty and flavorful. The adobo chilis combined with the homemade chili powder make this combination a must have for all chili conoisseurs. Thanks Alton for all the method in your madness.

    I had to make some alterations, but the results were a big success, instead of lamb and pork I just used beef and I made the chili with a crock pot instead of a pressure cooker. I wasn't able to keep it past the first half.

    Once again another... GOOD EATS

    While I like chili, this particular recipe had my friends coming back for more till it was gone- and then they complained because I hadn't made more!
    The chipotles with accompanying adobo sauce were the key ingredient- it was smoky with a bite, but mild enough that everyone could eat this and not worry about burning their mouth off.
