i love pouching. especially fish, but ive learned in italy that the cover the pouch in salt. laying the pouch on salt and then covering it completely. turns out rather well

We used this idea for a party where everyone made their own pocket! I had fish and different seasonings set out and each guest created their own masterpiece. We followed instructions and named our packets so it didn't get confusing. I know I will do this again!

I used a salmon fillet instead of snapper with this recipe - I just put the stuff that goes inside the snapper on top of the salmon - it was out of this world!
Moist and delicious - Way to go Alton!!

I used a golden trout and Tilapia fillets (my friend has a problem with heads on fish. I will probably use just fillets next time, they absorbed the lemon, oregeno and onion better, the cous cous was very very good with all the drippings.
Make sure you have a good seal though, i missed a section and had driy cous cous!!!!!!!
