    It came out perfectly golden and very crispy.It was a bit salty even though I did a quick rinse , and I did not put salt on the undercarriage , but I love salt so I was loving it . It was not greasy at all ,as I have had before, all the fat drained into the pan . The skin puffed up nicely . I put just a drizzle of honey across each piece and that really toned down the salt . I think its needs a sweet L.'orange sauce Yes I will be making this again. I'm no longer afraid of duck . It was cheap too $5.99 for two people .

    Too Salty! I don't know if I did something wrong, but much too salty. I did brush salt off, after 3 days, before roasting. It would have been much tastier, if not for the salt. Any tips?

    As an accomplished cook and winner of several amatuer iron chef contests I must say this is the worst duck preparation I have ever had. Salty beyond belief, dry, tough and the stuffing was as bad. I have always enjoyed Alton's receipe in the past especially his Mighty Duck. This was however the pits

    This recipe is so amazing that the traditional Turkey has been completely replaced by Duck in my holiday family meals. It's easy, even if it's not terribly fast. I've made it a handful of times and never managed to mess it up! Thank you, Alton, for this fantastic recipe!

    I hosted a christmas party last year and along with my turkey, I did the duck. From a critic who eats fresh hunted duck all the time, I was told it was the best they ever had, (And that was a real compliment from this perso who does not give out compliments easily.
    The only change was that since I used a old family recipie for Oyster Stuffing for my turkey I did a bed of corn bread stuffing with the duck and it came out awesome.

    Just finished this and it was yummy. Will do the duck on an inverted roasted so it gets more heat (used my convection feature. The dressing was delicious.

    Made this delicious recipe last year. it was a huge hit. I used a goose instead of a duck and i probably should have left it in the fridge longer than i did, but it was super flavorful and even the oyster dressing was perfect! just watch out for pearls!
