Good basic sandwich spread. Beats the cream cheese spreads you buy in the grocery store. And this is cheap and easy to make. Kudos!

Best vegetable cream cheese I ever ate and very quick and easy to make. There is a really nice flavor. I was afraid it would be too much garlic, but bcs it was roasted it gives the spread a nice sweet aromatic flavor.

Made per Alton's recipe directions. I used it as a spread on slices of ciabatto bread and placed under the broiler until the edges began to brown. I made about 24 slices. Everyone was scarfed down. Thanks Alton!

I don't think I would touch this recipe. Was perfect for me. Next time I'll make 3x the amount.

And I think my grandson actually might eat it. I'm going to add roasted carrots to it too though.

This is missing... something. Maybe it would be better in a sandwich with other flavors, but I couldn't really taste the veggies even though i roasted them until they were carmelized. Ended up adding a little bit of sundried tomato paste and some herbs to give it a kick.

Had my 12 year old veggie-phobic girl make this with me. She has now requested this at least once every other week, including her birthday meal.

Made this for a party and everyone said it was pretty good, but I didn't get many people who thought it was amazing. The spread is pretty sweet and good, but I wanted more flavor. I tried using a poblano chili one time and it added a kick but made the spread more bland I thought. Tried another time with some sweet basil, hoping it would help compliment the already sweetness of the spread, but it didn't do much. Overall this recipe is good and people like it, but its not for me.
