    The recipe as written is wonderful with pita and crudite. I have kids who eat in hyper-drive most of the and the 15 and 17 year olds were making approving noises over the platter. Leaving just enough time for my daughter to add a couple of cloves of roasted garlic to 1/2 cup of the dip used it as a spread in pita for her lettuce, tomato,cucumber, onion and tuna sandwich. We both agreed that this would become a refrigerator staple.

    Loved this recipe! I made it exactly and had it in a multigrain pita. It's also great with chips if you like a really thick, hearty dip. The roasting vegetables made the house smell so good!

    Ive tried a lot of Alton's recipes and I've not run across one yet that was not fantastic. The Roasted Vegetable spread is no exception. The only thing I ever change is fat-free cream cheese and occasionally add some cayenne pepper or crushed red pepper flake. Some have complaine that they didn't get the flavor they wanted, but they probably didn't roast the vegetables long enough. Short of burned or raw, this recipe is almost foolproof! Excellent as always, Alton!

    This spread is so easy to make and a hit everywhere I take it. Alton Brown does it a gain.

    This is definitely my new favorite sandwich! It will also be perfect at showers and dinner parties. We spread ours on rosemary olive oil bread and the flavors were wonderful together!
