This spread is easy to prepare and tastes good on a baguette or to dip crudites. It's also a great way of getting some vegetables into kids. Keeps well in the refrigerator for several days. The suggested combination of vegetables work well but the method is good for any flavors. I'm doing a roasted butternut squash for Thanksgiving.

I often find that "easy" recipes are either anything but, or taste commesurate with the effort. Not this one. I was able to make it with my six year old and it was simple and delicious. My only suggestion for health conscious cooks is to either substitute lower fat or fat-free cream cheese. Either way (and I've tried both it came out great!

My 6 yr old enjoyed this, as did I. I did add quite a bit of pepper & a touch of garlic powder at the end along with at least 2 tsp salt. My little one enjoyed this on crackers & didn't even think about it being vegetables, I'll certainly be making this again in the future.

The cream cheese really does make this 'kid friendly'. We added a bit more salt after it was mixed as well as a tablespoon of balsamic vinegar to 'brighten' the flavor a bit.
