This is an excellent icing. I was a bit leary as it used pasteurized eggs, but the taste more than makes up for my hesitation. My mother-in-law who is very skeptical of other people's desserts complimented me on the sugar cookies and icing. My biggest compliment was when she ate seconds!

I made the royal icing along with the sugar cookies from this episode, and coming from someone who's a clutz in the kitchen, this recipe is fool-proof!! The cookies and icing were PERFECT! I had a hand mixer, which did get tiring, and I never acheived super stiff peaks, but it didn't make a difference! I just got a stand mixer for Christmas, so now I'm reallyl looking forward to making this again!! PERFECTION!!

I prefered the cookies w/o the frosting. But my husband thought they were better with. Of course, he likes buttercream frosting, which I find too sweet, while I prefer the more subtle whipped cream frostings. So, whether you like this icing or not will be based on personal taste.

...contrast for A.B.'s sugar cookie recipe. It's everything Royal Icing should be. Yes, it's sweet. It's supposed to be sweet. The icing turned out snowy white and dried crisp. I used powdered whites & water and a clear vanilla from Mexico. I will try other extracts in the future for fun/variety.

Yummy icing. I used a hand mixer, and while it took me a little longer than expected, it turned out just great. Here's what I did- make absolutely sure that the egg whites are completely foamy before you start adding the sugar. Then add the sugar slowly, one cup at a time, while keeping the mixer going. Mix at high speed all the way around the bowl until the sugar is dissolved, then slowly add another cup and repeat. The more sugar you add the longer it takes to mix, but be patient and it will come together. I'm asking for a stand mixer for christmas next year. :

Never thought I'd say something was too sweet, but it was. Never achieved the stiff peaks either, but all in all, this is a recipe I'd recommend. The accompanying cookie recipe is good too!
